Eat, Drink, Enjoy: Savoring the crisp juiciness of chicken and the refreshing sweetness of watermelon.
Hello, fellow Hivers! It’s me again, @maria1025. Today, I’d love to share the breakfast I prepared for my family. I know this dish is very common to everyone here, but I really want to share it with you all.
It’s Story Time!
Last night, my 10-year-old daughter asked me to make crispy chicken for her breakfast. She also planned to bring some to school for lunch. Luckily, there was one whole chicken breast left in our fridge, so I agreed. We gathered all the ingredients needed to marinate the chicken to enhance its flavor. Since it was frozen, we thawed it for about 30 minutes.
Once the meat was ready, I washed it thoroughly and cut it into my preferred size—slightly smaller than the regular crispy chicken. Then, I added the aromatics for marinating, such as minced garlic, ground pepper, soy sauce, oyster sauce, liquid seasoning, and a small amount of sugar to balance the taste. I didn’t use exact measurements here—I just estimated the amount based on the quantity of chicken I was cooking. After that, I placed it back in the fridge/chiller to marinate overnight.
The next morning, my daughter woke me up because she was excited for me to cook her dish. So, I got up and prepared everything we needed.
For the breading, I mixed 1 cup of all-purpose flour and 1 cup of cornstarch, then added salt and ground pepper to taste, mixing them well. We don’t usually use store-bought breading mix—we prefer making our own so we can control and balance the flavor.
From here, I prepared three containers:
- The first contained the marinated chicken, and I already added 1/4 cup of flour.
- The second contained 1 large egg, which we used to dip the slightly coated chicken.
- The third contained the mixture of flour, cornstarch, and seasonings, which was used for the final coating.
Then It’s Ready to Fry!
Oh no! When I went to the kitchen, I realized we didn’t have much cooking oil left. Unfortunately, the small stores in our neighborhood were still closed, so I had no choice but to use what we had. It was still a decent amount, but deep-frying the chicken would have been. The show must go on! I heated the pan and poured in all the oil, waiting until it reached the right temperature to fry the chicken.
Luckily, I managed to fry all the chicken meat. And look at it—it was cooked perfectly! Crispy on the outside and juicy on the inside. My daughter loved the taste so much!

Since my husband bought a seedless watermelon last night, I also prepared it for breakfast. Of course, we washed it before peeling and slicing to avoid bacteria contamination. I cut it into bite-sized pieces.
Look how red and juicy this watermelon is! It tasted very sweet. Our family loves eating fruits, so whenever we have enough budget, we buy different kinds and stock them in the fridge.

Being a Stay-at-Home Mom
Being a stay-at-home mom comes with great responsibilities. I do a lot of household chores and take care of everything my husband and kids need. Sometimes, I feel exhausted, but whenever I think about doing this for my love ones, my tiredness disappears. Many people ask why I didn’t pursue my profession. I simply tell them that this was my choice, and this is where I’m happy. For me, I consider this a success. I may not earn as much as others, but I know that my family is well taken care of. For sure, your daughter enjoyed her foods with her friends and classmates. As a mother, there is nothing more fulfilling that making our children feel that they are loved. In return, them having good grades at school is more than enough. Btw, being a sahm is such a fulfilling job and you deserve all the love and respect in the world🫡

Seeing our children happy and doing well in school is truly fulfilling. That’s why I always make sure to provide them with their basic needs, love, and support. Being a SAHM is a tough but rewarding job!

Thanks for the recognition. Yes, it's a delicious dish, most of the kids love this kind of food. I guess it's because of the crispiness of the chicken skin, that's why more kids and even adults like it. And the fruit, aside from it's fruity taste it can also give us nutrients for our body.
