Hi my loving Foodie community,

What's up guys? I hope everything are OK for you in this difficult period staying safety and healthy as well as improve your activities. Yesterday I couldn't join with Foodie comunity due to my busy works. But today I started to continue my cooking skills. These days many people thinking about their healthy most. So today morning time me and wife reached to the kitchen for prepare vegetable and dried fish mixed curry. I don't need to explain more about importance of eating vegetables. In this post I'm going to introduce how we prepared how we made nutritious vegetable mixed dried fish cart curry.

Ingredients

  • 75 g of chopped tomatoes
  • 75 g of chopped long beans
  • 75 g of chopped pumpkin
  • Chopped onion
  • 100 g of finely chopped potatoes

  • Salt to taste
  • Chopped garlic
  • Rampe and curry leaves
  • Small green chilies
  • A little bit of cinnamon bark
  • Half a teaspoon of yellow powder
  • A teaspoon of chili powder
  • One and a half tablespoons of curry powder

  • 100 grams of dried fish
  • One cup of condensed coconut milk
  • Three cups of melted coconut milk

  • A few spinach leaves

Preparing method

  • Take a pan and add sliced ​​pumpkin pieces, finely chopped potatoes and dried fruits. Add cinnamon sticks, small green chillies and rampe and curry leaves.

  • Add chopped garlic, salt, curry powder, chilli powder and turmeric powder and mix well. Now add melted coconut milk and put it on the stove and let it boil.

  • Now add chopped tomatoes, convened coconut milk, chopped mackerel and chopped onion and let it boil again. Then add spinach leaves and stir. Now remove the curry from the stove.

After serve to the table this curry we had meal with rice. Of course..It was delicious with different taste. I can't say the taste of this, only know my family members who were enjoyed with ate this. You can trying it out very easily using these steps.

Without dried fish this recipe would be vegan. But died fish enhance the taste this food. You are always welcome @trangtran23
