Murder by Eggs, and Seeded Oat Cookies to Die for!

I've not popped into Foodie's Bee Hive for a very long while, and that's because I've been way too busy making boring everyday meals for our young male guests who stay at our BnB while doing their training. I'm sure you will recognize the type of male I'm talking about - give them fried chicken & chips, curries, roast chicken and roast potatoes, beefy casseroles, and they're happy.

Most of the veggies go limp on their plates, crying out to be eaten, so I've learned what to cook, and what not to cook!

It's been very boring for me, as I certainly don't have time to cook 2 menus; whatever they eat for dinner, we also eat!
Most of the regulars who use our accommodation have done their first stint for the year, so will only be back in mid-September again.

While we appreciate the business, it's great just hosting regular guests who eat out or cook for themselves, so I've been inspired to start playing in my favourite playground, the kitchen, again.

Hubby's not demanding when it comes to food, but I think he's tired of just getting cereal, boiled or scrambled eggs, and toast!

I made a tasty tomato, basil & onion sauce and made little 'nests' to poach eggs.
The eggs were perfectly done, still a little wobbly, and not hard-cooked at all.

I was just about to dish up when hubby read a report about avian flu, and that South Africans should avoid eating eggs, or at least make sure it's properly cooked! We both suspected this may be fake news, but I did not want to risk us catching this flu, so the lid went on again to make sure the eggs are properly cooked.
Not the same as runny soft egg yolk, but I wasn't willing to stand in the dock and be accused of:

Murder by Avian-flu contaminated Egg!

Of course, it was a load of hogwash, so I did not have to worry!

Our month-long ex-pat Australian guest left us a ton of treats when he went back home; this Ruby Grapefruit was too beautiful to scoop out so I carefully peeled each segment and served it with breakfast.

May was a month of birthdays and gifts; this pure Maple Syrup was a small gift my nephew brought all the way from Minnesota, when he visited for his birthday. I'm looking forward to enjoying it with pancakes or crumpets! It's absolutely delicious, our local imitation version may as well go and hide in shame somewhere in the nether depths of the pantry :)

When Mom Lily was still alive, she would prod me when the cookie tins were empty, but she's no longer around and I've been lax until I reached the point of being so tired of factory cookies!

Seeded Oat Crunchies it was going to be; I had all the ingredients, and assembled everything before I became glued to my PC.
Why I put it off for so long, I have no idea, as it really is a fuss-free recipe, and with oats, coconut, sunflower, chia, flax, and pumpkin seeds, one can overlook the sugar that goes in. I doubled up the recipe so I could share some with friends, and our new Swedish guest.

Seeded Oat Crunchies Recipe

  • 250 gram Butter
  • 500 ml Brown Sugar
  • 50ml Honey
  • 10ml Baking Soda (Bicarbonate of Soda)
  • 500ml Cake Flour
  • 2ml Salt
  • 500ml Coconut
  • 500ml rolled Oats
  • 250ml mixed Seeds - I used sunflower, chia, flax, and pumpkin seeds

Melt butter, sugar, and honey in a large pot
Add baking soda and stir well
Mix remaining dry ingredients together, make a well in centre
Pour melted ingredients in and mix well

Press dough into a sprayed baking sheet, using fingertips
Bake 15-20 minutes at 170° till a light golden brown - not too long or it becomes too hard
Cut into squares and leave to cool in pan
Store in an airtight container

You are too funny. I am sure it is fake news. You know when you describe your "boring" meals I forget for a second that I don't eat certain things and start salivating. You are someone that can do that to me.

Your delectable seeded cookies are what I would have wanted last night when I wanted something sweet. I found some dates and raw almonds which didn't get me very excited but your seed cookies would have been a delightful treat.

Hope your shoulder is getting better. Mine is sore now after twisting it while lifting at work. It's my turn haha.

Thank you my friend, but that's what your food does to me with all those flavours!
You could easily make these cookies with vegan butter/ margarine, and halve the sugar. Talking of dates and nuts, it is even better when you add some chopped dates and nuts to the dry ingredients.
That definitely was fake news, but it stopped me in my tracks for a minute, as a friend's little nephew is very sick with avian flu, but they live somewhere in the far East :)
Hope your shoulder gets better soon, being a chef requires lifting heavy pots and pans especially once they're filled with food.

Well done @lizelle, those cookies are perfect for my granddaughters, their mom and dad try to keep them away from too much sugar, and honey is great in oatmeal cookies.

Going to see them at my daughter's home next weekend, going to try a batch to take with me, thanks for the inspiration.

They are delicious and really easy @farm-mom. I made an error with the butter quantity but corrected it now.
This recipe can be turned into Anzac cookies by adding an egg & approx 3 tablespoons of water, rolled into small balls and flattened slightly with a fork, I will share that method next time I make the Anzac cookies version - they spread and become very thin, and are nice and crispy, whereas these seed bars are nice and chewy. I was wondering how it would be if I added Maple Syrup instead of honey?

Oh so nice, Marian's words not mine regarding your crunchies. I am more interest in those egg nests, as I eat scrambled eggs on Bovril and avo toast for breakfast every morning.
What a thoughtful gift of Maple syrup from your nephew. He definitely knows where your heart is.
Please just make sure, that you post me some of the crumpets/flapjaps with the syrup on when you make them. Yummy !LOLZ

Those tomato & onion sauce egg nests are a great way to poach eggs, really good my friend!
As for the crunchies, I use less sugar so hubby can have a 'cheat' treat 😉

You know why I write the reply with a sad heart after the news of today Lady Lizzie.
I have never poached an egg in my life, but I suppose one can boil, or bake them in the sauce?
Those crunchies look healthy and delicious and a tad of sugar can only make them better 😊

That's a delightful stuff! My mouth becomes watery upon seeing the peeled pomelo fruit. They're in season now here in the Philippines, I bet, because the pomelo tree in our yard as well as in my neighbor's is blooming and live the scent of their flowers!🤗❤️👍

Gosh that Seeded Oat Crunchies looks tasty, I can imagine the texture of it on my mouth, it looks mouth watering. I bet it's good with chocomilk drink 🤤

Really, what is it with grown men and vegetables? I used to have to hide beans and spinach inside meatballs, cook carrots and bell peppers into puree then smear it inside the skin when roasting chicken, and chop onions into such tiny pieces that they were invisible or my father wouldn't have gotten any vegs at all! He even picked the garlic slices out of the vinaigrette, and only ate the pasta and meat from any salad we put on the table!

I'm so lucky to have found a man who enjoys eating both fresh and cooked vegs, and thinks a sandwich looks bare if there isn't at least a slice of cucumber or some bean sprouts on top 💜

Mouth-watering! I'm off to the shops, so definitely getting stuff to make those eggs...and those cookies...and also, get some grapefruit. So I guess my shopping list is now this post, basically. They all look so yummy, yet light.

Though I do think I'd use a little more honey, and a little less sugar for the cookies... you reckon that could work?

I actually meant to add that I often use half that amount of sugar. Extra honey, @honeydue😉, would definitely be healthier and taste very good!
Mom Lily was a wise woman, she kept me on the straight and narrow, even in my old age😅
