Banana French Toast Sandwich

Not being a morning person, and even though the kitchen is my favourite playground, breakfasts are not my favourite meal to cook, definitely NOT early in the morning.

I can easily skip this meal as well, which is said to be the most important meal of the day!
The hubs is a type 1 diabetic, on Insulin, so eating at regular intervals is vital or he could land up in a coma if his glucose leaves drop.

I'm so tired of the standard toast and eggs - either scrambled or thrown into the electric egg boiler that shouts when the eggs are done.
My hubs never complains but I know he would like a little variation on the theme!
Don't get me wrong, I don't only give him eggs, which by the way, now appear to have wrongly been tainted as being bad for cholesterol.

Living in a subtropical region, we're never short of Bananas, and this always is part of our breakfast, on its own, with yogurt, or even on toast.
This fruit is said to help with good heart health as it contains high levels of potassium and antioxidants.

Our Sunday mornings generally are slow, and as breakfast always is served a tad later, I'm more likely to experiment in the kitchen.

I had the bright idea of attempting a Banana French Toast Sandwich with homemade seed bread I'd made on Friday. I was holding thumbs that it wouldn't fall apart, or rather, slide apart, with mashed Bananas as a filling.

My seed bread contained Flax, Chia and Sunflower Seeds, and was delicious when it was still hot out of the oven on Friday, eaten with butter only. Today was Sunday however, and the bread had started drying out a little, perfect for French Toast.

I need only have used 2 eggs for 2 large slices of homemade bread, but made a little scrambled egg for the hubs with the leftover eggs.

I thoroughly soaked the bread in the beaten egg mixture, by turning, and turning till it was saturated. Slices cut in half, topped with mashed bananas and fried till golden brown on medium heat in a shallow layer of Olive Oil; again turning and turning, cooking the sides as well which sealed in the filling.

The sides had to be cooked as well, and the Bananas did not all come sliding out as I feared!

Sugar Cinnamon was a must for me, but the Banana was enough sweetness for hubby.

Was it good, and did it call for a second helping?

Yes, and yes! But, we had it with yogurt topped with Tamarillo, a subtropical fruit from our garden.

I usually will skip starters so I have room for dessert. This was a deliciously fruity breakfast :)

It's morning here and I haven't eaten. I'm looking at your dreamy French toast and thinking about how to veganize this. You have my wheels spinning and my stomach gurgling. I can't imagine the privilege of living in the sub tropics and having banana trees and those other fruits. I have to look for food now but I'm lazy.😌

It was really good Carolyn, I've been craving another one but have been too lazy to make it.
We take it so for granted, the tamarillo is becoming one of my favourite fruit but only bears once a year.

That looks really delicious !

I ate a couple of cheese curds while I was trying to decide what breakfast would be. Since it is Sunday, I chose a snack cake, justifying that it was ok on Sunday to eat something totally awful for me, just this once.

Fortunately I suppose.... and unfortunately as well, it did not taste right to me first thing, so I ate two bites and left it laying. LOL.... it all worked out, bad choice, didn't eat hardly any of it. I'll have to decide something more substantial later.

That looks g👀d, never thought of trying french fried toast with banana like this, nice change!

Tamarillo with plain yogurt another to try, enjoy any fruit every day in yogurt for breakfast not so heavy first thing in the morning.

I think you know me by now Joan, anything for a sweet treat! I was really surprised that the mashed bananas didn't slide out, it was yum! The Tamarillos are really good this year, and like you, I much prefer something light for breakfast, bananas & yogurt is another favourite of mine.
Guess what, my passport is ready, finally applied at Prospecton, and was pleasantly surprised at the efficiency of the booking system. Just 10 working days later, it's ready, so we'll go early on Thursday. Went today but left too late & the collection queue was too long😕

Ideal breakfast although not banana very often normally fruits in season at the time.

Passport went quickly that is for sure, perhaps they have more efficient staff on hand now. Offices really not in a nice area! Now the planning begins with medical clearance and other requirements for Netherlands.
