I started this recipe by taking the purple cabbage and washed it very well, and then cut it into julienne strips.

Tome una olla , coloque aceite y lleve a sofreír los ajo, después incorpore tanto el repollo, zanahoria y cebolla y uní todos los ingredientes

One of the ingredients that gives it a very Asian touch is the soy sauce, I added enough since I like it a lot. I stirred it in so that the vegetables take on the flavor.
Uno de los ingredientes que le da un toque muy asiático es la salsa de soya, yo agregue suficiente ya que gusta mucho. Eso lo removí para que los vegetales tomen el sabor.

Posteriormente coloque sal y pimienta al gusto, removí y tape para cocinar hasta ver los vegetales totalmente suaves.

Para empezar con la preparación de la masa de los crepes, coloque los 200 gramos de harina de trigo, aceite, sal y agua hasta ver que la mezcla quede un poco liquida; ya que es la consistencia que necesito.

In a frying pan I put just a little oil and began to add the mixture and began to stretch in the pan, let the mixture look a little white and flip. We must not let it brown, as they must be soft to be able to roll.
En un sartén coloque solo un poco de aceite y comencé agregar la mezcla y empecé a estirar en el sartén, deje que la mezcla se vea un poco blanca y volteo. No debemos dejar dorar, ya que deben quedar suaves para poder enrollar.

Take a crepe, place filling, then roll up one part, then from the sides we take both ends and place it inwards; and fold it again. Seal with a little water at the ends.
Tome un crepe, coloque relleno, para luego enrollar una parte, luego de los lados tomamos ambos extremos y lo colocamos hacia adentro; y volvemos a doblar. Sellamos con un poco de agua en las puntas.

Fry in previously heated oil and let it brown on both sides.
Lleve a freír en aceite ya previamente caliente y dejamos dorar por ambos lados.

Delicious and healthy vegetarian spring rolls. As an option you can serve them with red sauce, which was my case. I recommend you to prepare them as they are easy and economical to prepare.
Unos deliciosos y saludables rollitos primavera vegetarianos. Como opción lo puedes acompañar con salsa roja que fue mi caso. Les recomiendo preparar ya que son fáciles y económicos de preparar.
