Give yourself a nice, easy and delicious treat for the weekend

I want to share with you, hungry bees, one of my favorite breakfast recipes, the typical local "Buhti".

It is easy to prepare, it has only five ingredients and it takes only about 30 minutes to cook.

  • Eggs - 3 large
  • Wheat flour - 2 tea cups (240-280 gr)
  • Yogurt - 400 ml
  • Baking soda - 1 tea spoon
  • Sunflower oil - to fry - 200-300 ml

It takes 5-10 min to mix all that stuff and 20-25 min to fry the "Buhti".
The name comes from their light and airy structure, something close to "puffy".


  • Put the baking soda into the yogurt and steer quickly. The chemical reaction will make the yogurt expand in a minute or two.
  • Put a casserole and pour the oil so it heats. I don't use maximum power, for my hot plate 7/9 or 6/9 works the best. There has to be enough oil so each of the buhti is able to "swim".
  • Break the eggs into a bowl and steer them. I don't use mixer as it doesn't have to be perfect ;)
  • Add the yogurt and steer, then add the two cups of flour and steer again until the mixture becomes homogenous.

Use two tablespoons - one as a measure, the other helps to push each "doze" quickly into the hot oil. Four buhti fit perfectly into my casserole, there has to be some space so I am able to easily turn their sides when the bottom is fried to my taste.

The perfect color is golden. Don't let them fry to the brown palette :)

The Buhti, in my taste, are best served with jam, honey and white cheese. What I also love about them is their shapes - always different. My grandmother had been preparing those same buhti for me too. Also, trust me on that, they are one awesome way to kickstart a day, as they give a lot of proper good energy :)

Here are the rest of my phone shots along the cooking and some average price of the ingredients as of mid January 2023:

  • Eggs - 3 large - EUR 0.75
  • Wheat flour - 2 tea cups (240-280 gr) - EUR 0.40
  • Yogurt - 400 ml - EUR 0.70
  • Baking soda - 1 tea spoon - EUR 0.05
  • Sunflower oil - to fry - 200-300 ml - EUR 0.75

So the total "investment" would be about EUR 2.65 :D
I haven't heard about any resto, bistro or cafeteria serving them. Probably because they don't that "commercial" outlook, lol.

This quantity is enough to satisfy three very hungry souls and it is not a problem at all to keep them covered in the room for another day. They taste awesome even when cold. Fried dough, who could resist that temptation, huh? :P
