Crispy fried eggplant and upgraded instant noodles for a meal.

I may be a vegetable lover, yet that doesn't mean I would eat all kinds of veggies. Most of the time, I would prefer green leafy ones, which I would add to making soupy dishes. It could be just had it steam. As much as possible, I avoid cooking fried foods. Why? It's so oily, I don't have health issues, but should I wait? Another is washing a greasy pan, which is something I wouldn't like doing 🤣.

One vegetable I seldom eat, at least on my choice, is eggplant. I'm not sure if it was only me, but something in the taste left on my tongue wasn't pleasant. Others, especially us Filipino, love it; even my husband fried and dips with bagoong. Me? It felt like eating oil! If you noticed, when you fry it, absorb the oil in a pan!

However, my sister-in-law gave me some, and I was shy not to accept it. It could be added to soupy dishes, but it would only be wasted as I won't eat. So, I did try my best to cook it to my preference.

What about frying it like what I saw on Facebook?

How? Here are the steps I was trying to follow:

  • Sliced the eggplant vertically into three.

After, check carefully as there might be unwanted tenants inside 🤣

I mean this! See that black thing? Worms on veggies, Armyworms if I am right? Though I researched, it wasn't harmful to eat, but still, who would like it? Unless you are fond of exotic foods.

This is also one of the reasons that I seldom buy eggplant. Imagine ending up almost half in the trash. You may say, why not pick the good ones? Ah, it was hard to tell; outside appearance is not a guarantee. I am curious to know how others did it.

  • After slicing, boil enough to cook.

  • Once cooked, I drained and air-dried it for a while, as it was hard to peel when hot.

Now it is almost ready , but I found out flour is unavailable in my kitchen!

Will this do? Hope so!

  • Get two eggs and beat, just like when preparing for scrambled.

  • Then, dip the eggplant and coat it with flour afterward.

  • Fry until it turns golden brown.

What I wanted was to eat something crispy. However, did someone remember that I am not good at cooking? 🤣

Yes, it was crispy, but the appearance wasn't the same as I had seen online!

I didn't even enjoy the crispiness as my baby woke up and cried when I was about to eat. 🤦‍♀ So, to have a better appetite, why not upgrade to some instant noodles?

Im also not a fan of eggplant. It makes my tongue itchy🫤. But maybe if cook the way you did, maybe I can it. But you must season it first.😂

I also love green vegetables, eggplant has never caught my attention, my grandmother prepares it and I have never even tasted it, so breaded it must change its flavor quite a bit.

Ehhhhh, thats one of my fav especially tortang talong with lots of tomato. Maybe cook it nalang na kakaunti ang oil. Ako pag naga torta di na nagalagay nang harima eh egg lang lahat lol. Pero tint version nanto diko pa natry, though nakita ko na din sya somewhere uwu. Sarap nito lalo naulan. Saka yang noodles.

Aha, nagluto si mother hehe. Yon din ang ayoko sa eggplant, yung may tenant sa loob, lol! And oo, it absorbs so much oil. Hope you enjoyed your instant noodles, sis :)
