(ENG-ESP) Exquisite and nutritious mixed salad with apples, chayote and corn
- Good morning dear Hivers, I wish you a wonderful weekend... On this occasion, I will share with you a very healthy and nutritious recipe that you can enjoy as a side dish or when you want to enjoy a light and easy to prepare dinner. Let's put on our aprons to prepare a delicious "mixed salad with apple, chayote and corn".
- Buenos días queridos Hivers, les deseo un maravilloso fin de semana... En ésta ocasión, compartiré con ustedes una receta muy saludable y nutritiva, pueden disfrutar como "guarnición" o cuando deseen disfrutar de una cena ligera y fácil de preparar. Pongámonos el delantal para preparar una deliciosa "ensalada mixta con manzana, chayote y maíz".
- To make this recipe I used the following ingredients: 1 chayota, 2 carrots, 4 potatoes, 1 apple, 6 tablespoons of corn kernels, 1 onion, 4 tablespoons of mayonnaise, 1 teaspoon of mustard, 8 capers (finely chopped), coriander leaves and mint.
- Para realizar ésta receta utilicé los siguientes ingredientes: 1 chayota, 2 zanahorias, 4 patatas, 1 manzana, 6 cucharadas de granos de maíz, 1 cebolla, 4 cucharadas de mayonesa, 1 cucharadita de mostaza, 8 alcaparras (finamente cortadas), hojas de cilantro y yerbabuena.
- In order for all the vegetables to acquire the right consistency we are going to cook them separately, since they have different textures. We cook the carrots until they are soft.
- Para que TODAS las verduras adquieran la consistencia adecuada las vamos a cocinar por separado, ya que poseen texturas diferentes. Cocinamos las zanahorias hasta que se ablanden.
- Add enough water to a deep pot, add 1 teaspoon of salt, cook the potatoes over medium-high heat. When they have taken a "semi-soft" texture, strain and take them immediately to the refrigerator.
- Agregamos suficiente agua a una olla honda, colocamos 1 cucharadita de sal, cocinamos las patatas a fuego "medio-alto". Cuando hayan tomado una textura "semi-blanda", colamos y llevamos enseguida a la nevera.
- Cut the ends of the chayote, remove the seed in the center. Remove the skin, cook over medium heat for 20 minutes or until it is ready.
- Cortamos los extremos de la chayote, extraemos la semilla que posee en el centro. Extraemos la piel, cocinamos a fuego "medio" durante 20 minutos o hasta comprobar que está lista.
- Cut the apple into small cubes, to prevent it from darkening, add the juice of 1/2 lemon (mix).
- Cortamos la manzana en cubos pequeños, para evitar que se oscurezca colocamos el zumo de 1/2 limón (mezclamos).
- In a bowl, combine the onion, add the juice of 1/2 lemon (season with salt and pepper). Add the apple cubes along with the corn kernels.
- Integramos en un bowl la cebolla, añadimos el zumo de 1/2 limón (salpimentamos). Añadimos los cubos de manzana junto con los granos de maíz.
- Next, we add the carrots and potatoes...
- A continuación, agregamos las zanahorias y las patatas...
- Incorporate our healthy and nutritious chayote, along with the mixture of mayonnaise, mustard and capers. Add the coriander and mint leaves and mix until well integrated.
- Incorporamos nuestra saludable y nutritiva chayota, junto con la mezcla de: mayonesa, mostaza y alcaparras. Añadimos las hojas de cilantro y yerbabuena, mezclamos hasta integrar bien.
- Cover and reserve in the refrigerator for 30 minutes so that ALL the flavors are well impregnated.
- Tapamos y reservamos en la nevera durante 30 minutos para que se impregnen bien TODOS los sabores.

Amiga que rica ensalada sin duda me encanta, lo único que le quito yo es la cebolla, porque aún no aprendo a comerla cruda 😅. Gracias por tu deliciosa receta.
Super feliz que te haya gustado la receta amiga, no sé si has probado sustituir la cebolla por el cebollín, que tiene un sabor menos intenso. Con respecto a la cebolla, a mi hijo tampoco le gusta cruda, cuando tengo más tiempo de cocinar y no estoy tan apurada con los quehaceres :) la dejo macerando solamente con sal, luego de 30 minutos las coloco en un colador y las presiono para que suelten TODO su líquido, de ésta manera su sabor es MUY suave, prueba de ésta manera y luego me comentas que tal?
