It’s been such a long time since I last made "Pumpkin Curry", and honestly, this dish is absolutely delicious! 🌟 Have you ever tried making it before? The flavor of pumpkin curry is incredibly rich, thanks to the combination of curry paste and creamy coconut milk.

The taste is a delightful blend of the creaminess from coconut milk, a mild spiciness from the curry paste, and a savory hint of salt. For those who love bold flavors, feel free to add more curry paste to turn up the heat. Plus, there’s a natural sweet and creamy note from the pumpkin itself. 🎃

🍋 Ingredients 🍋

  1. Pumpkin, cut into bite-sized pieces, 300 grams
  2. Red curry paste, 2 tablespoons
  3. Coconut milk, 400 milliliters
  4. Chicken, 200 grams
  5. Fish sauce, 1-2 tablespoons
  6. Salt, 1/2 teaspoon
  7. Sugar, 1 teaspoon
  8. Kaffir lime leaves, 2-4 leaves
  9. Vegetable oil, 3 teaspoons

Step 1:
Start by going to the supermarket to buy the ingredients, then wash the vegetables and chicken thoroughly to prepare them for cooking.

Step 2:
Cut the pumpkin into pieces according to the desired size, as shown in the picture.

Next, sauté the red curry paste with oil over low heat until it becomes fragrant.

Add the chicken and sauté it with the red curry paste until the chicken is cooked through, but not overcooked.

Add the coconut milk and simmer until the coconut milk separates, using medium heat to ensure a balanced simmer and a smooth, rich coconut texture.

Step 8:
Add the pumpkin.

Season with salt, sugar, fish sauce.

Once the pumpkin is cooked through, add the basil leaves to enhance the aroma. Then, the pumpkin curry is ready to serve.
