Eggplant Onion Dry Recipe.

How are you all? I hope you are doing well and enjoying your Saturday. Today, I am sharing an eggplant recipe with you all. I have shared many versions of eggplant curry before, but this one is my personal favorite, and I prepare it often. I like it because it's easy to make and can be prepared in minutes. Whenever I'm not in the mood for something fancy or different from the usual curry, I make this eggplant dish. As I mentioned earlier, eggplant curry can be prepared in many ways, and I make it in various ways myself.

Let's get started with the recipe.

💐Ingredients💐

200 grams of eggplant (baingan)
200 grams of onions (pyaj)
Some cloves of garlic (lahasun)
4-5 green chilies (hari mirch)
1 teaspoon of mustard seeds (rai)
Salt as per taste

💐Method💐

Wash the eggplant thoroughly and cut it into pieces. Soak the pieces in water to prevent them from turning black.

Peel and chop the onions, garlic, and green chilies.

Heat oil in a pan, add mustard seeds, and let them splutter.

. Add chopped onions, green chilies, and garlic. Saute until golden brown.

🏵️ 5 step
. Now add the eggplant pieces and mix well. Cover and cook for 2 minutes.

🏵️ 6 step
. Remove the lid, add salt, and stir well. Cover and cook for another minute.

🏵️7step
delicious eggplant onion curry is ready to be served.
