Recipe of Matar Paneer: A Delicious Indian Dish

Ingredients:
- Paneer (cut into long slices)
- Green peas (frozen or fresh)
- Onions (finely chopped)
- Tomatoes (finely chopped)
- Green chilies (finely chopped)
- Garlic-ginger paste
- Whole spices (cinnamon stick, cumin seeds, bay leaf)
- Ground spices (turmeric, coriander powder, red chili powder, and salt)
- Oil
- Curd for gravy (1 cup)
- Fresh coriander leaves (for garnishing)
Steps to Prepare:
Step 1: Prepping the Ingredients
Start by preparing all the vegetables and spices. Chop the onions, tomatoes, and green chilies finely. Prepare garlic-ginger paste. Take the green peas out of the freezer and keep them ready in a bowl. Slice the paneer into long pieces.
Step 2: Cooking the Base
- Heat oil in a pan. Once the oil is hot, add the whole spices like cinnamon, cumin seeds, and bay leaf. Sauté them until aromatic.
- Add the garlic-ginger paste and roast it well.
Step 3: Building the Flavors
- Add the chopped onions to the pan and roast them until golden brown.
- Toss in the chopped green chilies and sauté for a minute.
- Add the tomatoes along with ground spices—turmeric, coriander powder, red chili powder, and salt. Roast this mixture until the oil starts separating from the spices.
Step 4: Creating the Gravy
- Pour half a cup of water into the mixture and let it cook until the water evaporates. This step ensures all the spices blend together.
- Add the curd and stir well. Let it cook for a few minutes to create a rich and creamy gravy.
Step 5: Adding Peas and Paneer
- Mix in the green peas and cover the pan with a lid. Let the peas cook for a few minutes until tender.
- Finally, add the paneer slices and let them simmer in the gravy for 2-3 minutes so they absorb all the flavors.
Step 6: Garnishing and Serving
Garnish the dish with fresh coriander leaves. Serve it hot with chapati, naan, or rice.
