Morning Glory & Coconut Stir-Fry πŸ₯₯

Β  Β  Β Today I prepared one of my wife's favorite dishes, my Indian take on Cambodia's traditional dish of stir-fried morning glory. The Khmer way is very simple, basically , just garlic, sometimes a chili or two, and some morning glory (kangkong) stir-fried with oyster sauce. My way is to stir-fry the morning glory with coconut, chilies, mustard seeds, roasted lentils, curry leaves, and fried tofu, more of an Indian-style dish.

A Bath For The Cub 🏍️

Β  Β  Β After lunch it began raining, and because we don't have a hose or pressurized water yet, this was a perfect opportunity to wash the Super Cub in the rain. I've also been tinkering with the carburetor, trying to dial in the settings for the somewhat high altitude here.

Signs Of Yesterday's Badminton Accident πŸ’©

Β  Β  Β While playing badminton with Srey-Yuu yesterday, she hit the shuttlecock a bit further than I was prepared to go, but I made a mad dash to flex my agility and skills. Well, it ended with me stepping in the quicksand mud mix, losing my shoe, and rolling over backwards. I managed not to get my face muddy, but the shoe hole remains as a reminder of this comic spill that the neighbors witnessed.

The Sun Is Back πŸŒ…

Β  Β  Β For the past month we haven't seen the sun more than 5 or 6 minutes at a time, but this evening blessed us with a pink and orange sky, so Monkey-B and I went to admire the sky from our new corner bench on the cabin's veranda.

Β  Β  Β While there, I figured we might as well take you on a tour of the cabin's progress. Monkey-B climbed up the loft and expressed her desire to spend a night sleeping up there.

Β  Β  Β It's such a cool little area, and I'm sure any guests with kids will find it a useful area because the cabin is quite small, With the new veranda and loft, this little cabin feels much bigger. That's all for now folks, stay tuned....

The cabin is totally cool. I would never want to leave if I were to live there.

Your dish sounds super yummy. I have never had something with roasted lentils before. Also thanks to you I made a curry leaf podi. Until you mentioned podi I had never heard of it. I feel like I've been ripped off all my life. It's amazing magic powder.

The cabin is almost finished, well by almost finished I mean in the bare minimum state acceptable to host guests. We finally got a mattress on the bed frame, and now we're saving to buy a cotton sheet set and pillows for the bed.

Roasted lentils provide a nice smokey flavor to dishes. If the lentils are small enough, sometimes they are able to be eaten after being roasted, but most of the time they need to be also cooked a bit to soften enough not to hurt the teeth and be a pleasant crunch.

Wow! Curry leaf podi is a bold one for first timers, my family doesn't even eat it, only I like it. They like a roasted lentil-garlic one I make and also a peanut-tamarind podi as a solid number two. I am glad you are on the podi path, when I first discovered them I ate no chutney or pickle for months.

Your food just looks so delicious. I'm glad that you were able to see the sun after a very long time unlike here we dread the sun because it stings us too much. You have to be careful next time, an injury would suck big time.

Well, be careful what you wish for I guess, the sun is out today and it seems abnormally hot, but I guess that is because we haven't seen it for more than a month. Haha, yes it would be embarrassing to seriously get hurt while playing backyard badminton. πŸ™πŸ™πŸ™

Hehehe, it's hitting 44ΒΊC here, and some of the aircons are not keeping up with the temperature. But I'm glad that you guys were able to see the sun.

There are plenty of difficulties living in the mountains, but overheating is not one of them. That is extremely hot, hope you have plenty of cool water to drink

Wow.. is the dream of a Monkey-B wanting to become a Chef? Very cool, well..it seems Monkey-B wants to continue his father's dream which is a bit delayed (Hiver is a good cook) lol πŸ˜„

I also really like playing badminton, and it can be said that I am also proficient in this sport. Yes in the photo I can see the shoe holes you left there my friend... 😁

It must be very nice to be able to see the sun again, really.. a very beautiful sight..

I think she likes the idea of being a chef, but also is smart enough to know chefing is hard work. She has told me she'd like to design menus, bring the food to customers, and basically be a restaurant manager that just gets to hang out. When he had our own restaurant, I think she enjoyed all the various leftovers we had to eat each day.

The sun was a welcome treat, definitely a good badminton day, but getting my shoe sucked off my feet by a mudhole was not the greatest part of the day, but it did give our neighbor a good belly laugh.

That loft makes me want to be a kid again and hang out up there. The cabin looks awesome. I like your Indian take on morning glory, I can almost taste the delicious spices you use.

I climbed up there to try and experience some childhood magic, and I must say it is gone from me a bit. I wasn't as excited as I thought I'd be up there, guess I'm slowly becoming an old fart. I am very surprised that my family likes my morning glory dish because it's basically the Cambodian national vegetable, and they only tolerate one way of preparing it, a dish I am not so fond of.

The sunset view is beautiful. Love the bright orange it shines through the sky.

Ex-gurlfriend (now waifu) used to live on the loft, a small area at the room of her sister. It's kinda fun to hid there as a little private room. But ofcourse, those feeling only lasted couple of times, and become great inconvenient when doing "extraordinary" activities 🀣
