How dry should the rice be before harvesting it from the farm

Harvesting is getting closer than ever for me and am already preparing the tools that I will be using to harvest it, harvesting is done manually and not mechanically which means that we have to obtain certain tool sickle before we start anything but before that how do we farmers even know when it is best for us to start harvesting from our farms,for a cereal crop like rice we the harvesting has to be done at a specific time .

Cereal crops are not held by their branch or stem and the more dry the plant gets the weaker the branches and stem becomes which will eventually cause the seeds we are trying to harvest to fall off from the farm and this causes farmers to experience huge loss because the cereals are so small that we can't start picking them from the ground that's why it makes sense to harvest it while the branches are still fresh ,the rice seed does not have to be overly dry once it has changed its color from fresh green to dry yellow then we don't have to wait any longer.

Seeds can be so fragile to the extent where small wind can just blow them off the plant and pest running around the farm can easily do the same so it is better to start harvesting at the right time to avoid sure uncontrollable and unhappy situations after so many months of tilling and toiling.
