How are you today ? I hope and pray, my friends are always given health and also patience in living this life. One thing I am sure and believe in, all members of Cinnamon Cup Coffee Community are people who are always passionate and full of inspiration. Yup, for me personally, coffee is another name for inspiration.

I believe there are no coincidences in this world. Everything that happens in this world is a series of events that form a collective result. When I got to know Hive Blockchain a year ago, I had many moments that changed my life journey. One of them, I can do my hobby of tasting different flavors of coffee from different places, locations, cultures or countries.

Some time ago, my wife and I went to Bangkok, Thailand. I can't forget my favorite hobby. Apart from going to coffee shops, I also look for coffee beans to take home with me. On one of my trips to the coffee shop there. I got one coffee recommended by the barista from that coffee shop. I decided to buy 250 grams and try it to review it when I arrived in Indonesia later.



Doi Mon Chong Coffee Beans – Chang Mai, Thailand

I bought these coffee beans from Street Fourth Coffee Roastery in Bangkok, one of the local coffee shops and also a quite famous coffee roastery there. According to the information I got, these coffee beans come from the Doi Mon Chong mountain area in Chang Mai, Thailand. The area is famous there because it is a center for agriculture and quality coffee. Unfortunately, as Indonesians conversing with Thais, our English isn't very good so the info I got was sketchy.

One of the info I got (but I haven't verified the truth), during certain periods the coffee plantations in the Doi Mon Chong mountains will be covered with snow, this climatic condition makes the coffee taste unique and distinguishes it from other coffees in this world. Actually, I'm not sure if this information is true or not because our conversation at that time was very absurd. By thy way, if friends know about this info, share it in the comments column.

Let's first review the packaging of this coffee. First, we see that this coffee is packaged in a very simple valve packaging, typical of local coffee shop production. Unfortunately, for me personally the packaging is very unattractive. The orange sticker that was posted had no thinking power, only a few written information about the coffee beans. I often find coffee packaging from local roasters with cooler and more attractive designs.

The coffee that I bought is Arabica honey processed coffee beans. Honey process is one of the post-harvest processes of coffee beans. Honey process is made by drying the coffee beans directly after the skin peeling process. In the general post-harvest coffee process, the peeled coffee beans are washed thoroughly before being sun-dried or dried, and this is what distinguishes it from the honey process. The sap of the remaining coffee beans gives the coffee beans a unique and sweet taste, so this post-harvest process is known as the honey process.

So, let's take a look at these coffee beans. When I open the coffee packaging, the aroma of coffee comes out fragrant and very fragrant. One of the things that makes the coffee beans smell good is because these coffee beans are roasted at a medium to dark level. This roasting level makes this coffee bean bring out its best aroma. The shape of the coffee bean is also blacker and slightly oily. Usually, coffee beans that are roasted at a medium to dark level have a more bitter taste. Because of that, I tried brewing these coffee beans using the V60 manual brew method to find the best taste.

Look at the condition of these black and oily coffee beans. I decided to grind the coffee beans with medium coarse size. Coffee beans that are coarser when brewed can reduce the bitter taste of coffee. I'm curious, why honey coffee is roasted with a medium to dark level. Because in Indonesia, honey coffee is rarely roasted like that. I think it's a matter of taste from local residents.

I tried brewing this coffee bean. This coffee powder gives off a very delicious aroma. From the aroma, we know that this coffee is processed and roasted very well. The aroma is very strong and we can feel the aroma of chocolate from the brew.

I can't wait to try this coffee. My brew still looks darker than the coffees I've brewed. I try to sip this coffee and flow it all over my tongue. The bitter taste is still a bit felt at the beginning when I drink this, but I get a unique taste from this coffee.

Usually, honey coffee will give a strong sweet taste. I also feel the sweetness in this coffee, but I feel the sweetness of this coffee when it tastes. The sweetness is like the sweet taste of tropical fruits, which is combined with a strong caramel. I am very curious, how does this coffee feel when it is roasted at a medium roast level, the taste will definitely be different.

For me coffee is a unique product. The more quality coffee beans we get, the more ways to roast the coffee beans and how to brew them to get the desired taste. Therefore, for coffee lovers who have the opportunity to go to one place, they will definitely look for a coffee shop or coffee beans that they can bring home, like I did. Thailand coffee has said to have a very unique and distinctive aroma and taste, at least from what I have heard. I have tasted coffee from India that had a very spicy and distinctive flavor.

For me, this coffee is well too roasted. Usually, when the roast becomes too dark, the inside pressure in the bean forces the oils to be pushed out of the coffee. That’s why they seem oily. I would prefer special coffee a bit more lightly roasted.

There are also some different brewing methods that will help you brew dark roasted coffee too. James Hoffman had such a video in YouTube lately.

It can be very difficult to have conversations when you don't know the local language very well. I guess all that matters in the end is whether the coffee tastes good. This one sounds like a good product whether the plantation is cover in snow for part of the season or not.
