Hello hivers,it has been a loaded weekend for me as a mother,a wife and a true Nigerian. Yesterday was a fixed day to exercise our civic responsibilities.

I left home very early to my farm to harvest my crops, since it's the only free day i don't go to work. Right there in the farm,I was still checking time in order not to get to my polling unit late. After sometime,I left the farm to the polling unit to cast my vote, fortunately for me,I didn't spend much time there,I was given the opportunity to exercise my franchise and then return home to continue with my farm work.

Indeed my farm yielded great harvest this year. I harvested cassava. Cassava (manihot exculenta)is a perennial crop with edible root which contains enough starch. It's an energy giving food which can be processed into different things like garri
(cassava flakes),fufu, chips (tapioca), cassava flour etc. It's peel can also serve as manure to farmers and feed for animals like goats etc.
I choose to process my cassava into garri using the following steps.

After uprooting the cassava, peel off the back with a sharp knife, wash the peeled cassava with clean water, take it to the engine to grind.

Preferably, garri can be yellow or white in colour. If preferred white,no oil will be added after grinding but if preferred yellow, oil will be added to the grinded cassava before packaging in a bag then press with an engine. The process of making garri is not what can be done in a day,I had to leave the bag of grinded cassava in the pressing engine till tomorrow to dry.
Once it's dry, I sieve to reduce the cassava chaff, then fry it with a pot.

In this case, oil is not used as when frying fish, meat etc, the frying pot will be placed on fire, then the sieved cassava will be added in bit and fry to dry. This gives a good looking cassava flakes known as "Garri".

Wow, you indeed had a great harvest, I congratulate you on that. In fact gari is a life saver in Africa here, especially we students, the fact that it comes from cassava makes it more amazing. I would like to experience the process of making gari one day
