Coconut and banana cake [ENG||ESP]

HI EVERYONE

In a coconut and banana cake nothing can go wrong, here the combination of flavors is really surprising, it has a soft texture with coconut chunks and its aroma invites you to try it. This cake contains very typical ingredients, used in traditional sweets, they are molasses, cinnamon and coconut, I am a faithful admirer of molasses, this is a sweetener full of history and is part of the gastronomic culture of my country Venezuela, I used it making a special glaze to bathe the cake.

Ingredients for the cake

  • 1 cup ripe bananas mashed with a fork
  • 1 cup shredded coconut, coarsely chopped
  • ½ cup sugar
  • ½ cup sunflower oil
  • 1 tablespoon vanilla essence
  • 4 eggs
  • 3 cups of leavening wheat flour
  • 1 cup coconut milk, recipe to make coconut milk at home
  • 1 tablespoon of cinnamon

Ingredients to make the coconut syrup

  • 1 cup water
  • ½ cup organic molasses
  • ½ cup shredded coconut, coarsely chopped
  • 1 tablespoon vanilla essence

Preparation

Preheat the oven to 180 degrees
Mix the banana, grated coconut, sugar, oil, cinnamon and vanilla, beat the eggs and add them to the mixture, then gradually add the flour and milk, alternating these last two ingredients, it should be a thick mixture.

Pour the mixture into a cake pan and bake for about 40 minutes, or until the cake is set.

To make the coconut syrup, place all the ingredients in a small pot and let it boil for ten minutes over high heat, then let it cook for ten minutes over low heat and turn off the stove. This syrup should preferably be left to rest for at least one hour before being used, in fact it is good to have it in the refrigerator ready for any occasion.

Now just bathe the cake with the syrup, I cut the cake into individual portions and then add the syrup spreading it all over the cake, this dessert is exquisite and the next day is even tastier.

Bizcocho de coco y banana

En un bizcocho de coco y banana nada puede salir mal, aquí la combinación de sabores es realmente sorprendente, este postre tiene textura suave con tropezones de coco y su aroma invita a probarlo. Este bizcocho contiene ingredientes muy típicos, utilizados en los dulces tradicionales, son el papelón, la canela y el coco, soy fiel admiradora del papelón, este es un edulcorante lleno de historia y forma parte de la cultura gastronómica de mi país Venezuela, lo utilice haciendo un glaseado especial para bañar el bizcocho.

Ingredientes para el bizcocho

  • 1 taza de bananas maduras pisadas con un tenedor
  • 1 taza de coco rallado, por la parte más gruesa
  • ½ taza de azúcar
  • ½ taza de aceite de girasol
  • 1 cucharada de esencia de vainilla
  • 4 huevos
  • 3 tazas de harina de trigo leudante
  • 1 taza de leche de coco, receta casera para hacer leche de coco
  • 1 cucharada de canela

Ingredientes para hacer el almíbar de coco

  • 1 taza de agua
  • ½ taza de papelón (piloncillo, panela)
  • ½ taza de coco rallado, por la parte más gruesa
  • 1 cucharada de esencia de vainilla

Precalentar el horno a 180 grados
Mezclar la banana, coco rallado, azúcar , aceite, canela y la vainilla, batir los huevos y agregarlos a la mezcla, luego hay que incorporar poco a poco la harina y la leche, alternando estos dos últimos ingredientes, debe quedar una mezcla espesa.

Vaciar la mezcla en una bandeja para tortas y hornear por 40 minutos aproximadamente, o hasta que esté listo el bizcocho.

Para hacer el almíbar de coco se debe colocar todos los ingredientes en una olla pequeña, y dejar hervir por diez minutos a fuego alto, luego déjelo cocinar diez minutos a fuego mínimo y apagar la estufa. Este almíbar se deja reposar preferiblemente mínimo una hora antes de ser utilizado, de hecho es bueno tenerlo en la nevera listo para cualquier ocasión.

Ahora solo queda bañar el bizcocho con el almíbar, yo corte el bizcocho en porciones individuales y luego añadir el almíbar esparciendo por todo el bizcocho, este postre es exquisito y al día siguiente es aún más sabroso.
