Utilising the bones and remainder for delicious chicken soup 😍

I learned this from my Aunt β€” to never throw away any bones after eating (provided they were eaten in a clean way) so that they could be used to boil soup. For the baked chicken yesterday, I told my husband and my eldest son to eat in a clean manner, meaning not to put saliva all over the bones, in view of I wanted to use the bones for soup. They followed by using cutleries to tear out all the chicken meat and then placed the bones on another plate for me to keep, for cooking later. Thank you!

Simple Chicken Soup

At the time I cooked this somewhere last week, my youngest son was still feeling unwell, unable to eat and needed tube-feeding. This called for speedy action in the kitchen, every minute counts. So, really nothing fancy here, like a fast add-and-drop kinda cooking, and you got to see what we ate at home, super duper down-to-earth meals.

I placed the bones from three chicken legs together with the remaining sauce from the baking pan, and some remaining baked carrots and potatoes which we could finish into a small soup pan, then adding water just enough to cover the bones. The sauce was already very flavorful from the soy sauce, salt pepper, cumin powder, paprika powder and coriander powder. Therefore, I did not need to add anymore seasonings except some dried oregano.

I also added in some diced carrots and potatoes for vegetables purpose. Then, the whole pot was brought to boil for 15 minutes and then to simmer for 45 minutes.

The chicken soup turned out really super flavorful and delicious. I seasoned a bit more with some peppers for extra kick!

There was still some macaroni in the fridge from the leftover. It was already the 4th day as leftover so I usually would not give that to the children. I myself ate the macaroni with the chicken soup. A fast meal yet I felt blissful. The husband brought eldest son out to eat something else.

Chicken soup with seafood tofu

My eldest son loved seafood tofu, since I still had some, I added into the chicken soup for extra ingredient, especially for the eldest son.

For our dinner, we got to enjoy this hearty bowl of chicken soup with seafood tofu, carrots and potatoes.

As for his rice, I decided last minute to quickly fry some slices of luncheon meat with egg, also his favourite food.

We totally enjoyed this simple meal at home. We counted it all joy when we faced trial, and still gave thanks that we had a comfortable shelter and a full meal.

Initially, I thought I wanted to be on diet a little and just consumed this soup for my dinner but the luncheon meat across the table eaten by my son was too captivating. πŸ˜‚

I ended up went and scooped a little rice for myself to enjoy with the luncheon meat. So yummy!

Something very intw43sting using the left9ve4 bo es for soup....hardly anyone ever tried th8s..but what if we wash them properly before putting in reuse....rem9ving all the saliva. The food looks delicious

My Aunt learned this from the expatriates when she worked with them as chef. They loved to eat roasted turkeys and chickens and quite often baked chickens. The leftover bones would be used for stew or soup the next day. I think if the bones be kept and washed away all the saliva clean, will be okay too. You are the chef! You call the shot! 😁

Hmmm, we never tried that technique. But if that still produce some flavor then thats worth doing it. But the thing is, eating meat with the bones is always the best πŸ˜†. So Im not sure if we cab try this.

By the way I suddenly crave for some macaroni soup with chicken and those veggies. Just a little evap milk and it will turn up Sopas, here in the Philippines..
