Eggplant sandwich [ENG-ESP]

Greetings dear friends who love vegan food. Today I share with you a delicious vegan option for dinner or lunch based on eggplant with a wonderful filling, consisting of carrots, onion and mushrooms. This recipe reminded me of my mother, she loved eggplant in all its presentations. However, I wanted to enjoy eggplant in a different way, I prepared a delicious sandwich with a luxurious filling.
This recipe is very simple to prepare, there is only one step that I considered necessary, salt the eggplants to remove the bitter taste. This time I left the skin on, which is very rich in vitamins. Without further ado, my recipe.
Ingredients
- 2 large eggplants
- 1 medium onion
- 1 medium carrot
- 50 grams of cooked mushrooms
- Salt to taste
- Extra virgin olive oil
Preparation
1.-. Wash the eggplants, slice them and then impregnate them with salt. We must leave it this way for 15 minutes. Once this time has elapsed, we rinse them with plenty of water. To remove all the excess, we leave them soaking in water for about 10 minutes.
2.-. While the eggplants are soaking for 10 minutes, wash the onion and carrot and cut them into julienne strips.
3.-. In a frying pan add a drizzle of olive oil and sauté the vegetables separately, first the onion and then the carrot. Season both vegetables with salt to taste. Set aside.
4.- Remove the eggplants from the water, drain and dry them well. Then, spread a little olive oil on a griddle and grill the eggplants until golden brown on both sides.
5.- Once the vegetables are ready, we proceed to fill our sandwich. On a layer of eggplant, we place the onion, carrot and mushrooms. We seal by placing another layer on top and we have our delicious vegan sandwich.

Saludos estimados amigos amantes de la comida vegana. Hoy les comparto una deliciosa opción vegana para cenar o almorzar a base de berenjenas con un relleno maravilloso, que consiste en zanahorias, cebolla y champiñones. Esta receta me hizo recordar a mi madre, le encantaba la berenjena en todas sus presentaciones. No obstante, quise disfrutar de la berenjena de una manera diferente, preparé un rico sándwich con un relleno de lujo.
Esta receta es muy sencilla de preparar, solo hay un paso que consideré necesario, colocarle sal a las berenjenas para quitarle el sabor amargo. En esta ocasión les dejé la piel, que es muy rica en vitaminas. Sin más preámbulos, mi receta.
Ingredientes
- 2 berenjenas grandes
- 1 cebolla mediana
- 1 zanahoria mediana
- 50 grs de champiñones cocinados
- Sal al gusto
- Aceite de oliva extravirgen
Preparación
1.-. Lavamos las berenjenas, la rebanamos y luego las impregnamos con la sal. Debemos dejarla así por 15 minutos. Una vez transcurrido ese tiempo, las aclaramos con abundante agua. Para retirarle todo el exceso, la dejamos remojando en agua unos 10 minutos.
2.-. Mientras transcurren los 10 minutos de remojo de las berenjenas, lavamos la cebolla y la zanahoria y las cortamos en juliana.
3.-. En una sartén añadimos un chorrito de aceite de oliva y salteamos por separados los vegetales, primero la cebolla y luego la zanahoria. Condimentamos ambos vegetales con la sal al gusto. Reservamos.
4.- Retiramos las berenjenas del agua, las escurrimos y las secamos bien. Luego, untamos un poco de aceite de oliva a una plancha y ponemos a asar las berenjenas hasta que se doren por ambos lados.
5.- Una vez listos los vegetales, procedemos a rellenar nuestro sándwich. En una capa de berenjena, colocamos la cebolla, la zanahoria y los champiñones. Sellamos colocando otra capa encima y ya tenemos nuestro delicioso sándwich vegano.
