Peking Chicken with Shrimp Paste

Many food vendors make various types of chicken. I want to make Peking chicken cooked with very simple spices and mixed with stir-fried broccoli. This food contains a lot of vitamins that come from broccoli vegetables. In my place this broccoli can be said to be quite expensive from other types of vegetables because broccoli is very much vitamin A. When buying chicken to make Peking chicken you must buy a young chicken. Because young chicken meat is still tender and soft.



You need to know that broccoli vegetables do contain a lot of vitamins, especially in consumption by mothers of complementary foods it is also very good for toddlers. The way to clean broccoli that you should know is, dip broccoli flowers into salt water let stand for about 30 minutes, then wash with cold running water so that it can remove residue and other impurities contained in broccoli flowers. This method can also be applied in the process of cleaning other types of vegetables. So, I want to make a meal that contains chicken meat mixed with broccoli vegetables called Peking chicken in my place.



Ingredients:

  • Chicken 500 grams
  • 1 gram all-purpose flour
  • 200 gram broccoli
  • Salt 1 teaspoon
  • Sugar 1/2 teaspoon
  • Cooking oil 1/2 kilo gram

Chicken Steaming Seasoning

  • 4 cloves of shallots
  • 2 cloves of garlic
  • 3 cm turmeric
  • 1 ginger segment

Spice paste

  • 5 shallot cloves
  • 2 cloves of garlic
  • 1 tomato
  • 5 red chili peppers
  • 10 cayenne pepper
  • 1 round shrimp paste

Broccoli stir-fry seasoning

  • 4 shallot cloves
  • 2 cloves of garlic
  • 4 long green chilies
  • 2 red chili peppers
  • 1 tomato


Making Steps

Method A

First Step:

Clean the chicken, sprinkle with salt and lime so it doesn't smell fishy. Then grind the seasoning to steam the chicken first so that the marinade is absorbed.



Step Two:

Put the spices that have been mashed together with the steamed chicken for about 15 minutes.



Step Three

After the marinade is evenly absorbed turn off the heat set aside first.



Step Four

Separate all-purpose flour into two parts, wet and dry.



Step Five

Smear the chicken that has been steamed with wet flour drain, then roll the chicken in dry flour while squeezing so that curly skin is formed let stand for ± 5 minutes.



Sixth step

Heat the oil and fry the chicken until browned then remove and drain.



Method B

Step one:

Heat the oil, fry the seasoning paste first.



Step two:

Then grind until smooth, add 1/2 teaspoon sugar to make it easier to grind, then set aside.



Method C

Step one:

Split broccoli in half, cut into small pieces.



Step two:

Slice shallots, garlic, tomatoes, red chili and green chili.



Step three:

Heat the oil, saute the spices that have been sliced until fragrant.



Step four:

Add broccoli that has been cleaned, cook until cooked.



Step five:

Sprinkle salt stir until evenly distributed turn off the heat.



Step six:

Ready to serve.



Peking Chicken with the flavor of chicken that has been steamed with very delicious spices in addition to the perfect frying and a mixture of sauteed broccoli vegetables that are very delicious must be very suitable for a dish during the day. No need to go to restaurants or food stalls anymore, because it is available at home and can be eaten with family.
