How are you guys, good night as always dear friends. Today I am bringing you to prepare a delicious and nutritious Moju that can be made from Thai Eggplant. It can be kept for a long time. Some people make curries by removing the middle part of Thai Eggplant. So I thought to combine all those things and make a delicious dish. Because by adding all the things here, the nutritional quality of this works, so let's see how to make this.

Ingredients;

⚫️Thai Eggplant 100g.
⚫️ 1/2 Teaspoon of turmeric powder.
⚫️1 tablespoon of pepper powder.
⚫️2 or 3 teaspoons of sugar.
⚫️ 1 Teaspoon of Mustard Powder.
⚫️3 tablespoon of vinegar.
⚫️A chopped onion.
⚫️Curry leaves.
⚫️A little chopped garlic.
⚫️4 pods of chopped green chillies.
⚫️Coconut oil 300ml
⚫️Salt to taste.

Method of making;

1 step.

First, take the Thai Eggplant and clean it with water. Then cut the Thai Eggplant into small pieces. As in the following images.

2 step.

Then add some turmeric powder and some salt powder to the chopped Thai Eggplant.

3 step.

Then take a pot and put oil in it and let it heat. After it is heated, add the chopped Thai Eggplant and fry until golden color.

4 step.

Then fry the garlic, curry leaves, onion and green chillies until golden. After roasting it, keep it in a separate container.

5 step.

Then take a pot again and let it heat up with 3 table spoons of vinegar. After heating, add mustard powder, turmeric powder, 2 teaspoons ,Salt to taste of sugar and stir well. As in the following images.

6 step.

Then add all the fried ingredients to the paste and stir well. Keep it covered for about 2 minutes.

If you have trouble finding the specific type of eggplant I mentioned, you can try the recipe using regular eggplant cut into small pieces. Yes, the spices in this dish really add amazing flavor! Thank you very much for your comment.
