Let's prepare a very tasty and nutritious curry with Thai Eggplant and Spinach.
Good morning to all my friends on Hive! Today, I’m excited to share a delicious and nutritious curry with you, featuring Thai eggplant and fresh Spinach. This dish is not only tasty but also a healthy choice for the whole family.
Thai eggplant is rich in fiber and low in calories, aiding digestion and providing a good source of potassium and vitamins. Meanwhile, fresh Spinach are packed with iron, calcium, and vitamin A, which contribute to bone health, skin health, and good vision.
Let's dive into how to easily prepare this flavorful and wholesome dish!
Required Ingredients...
🍀 1 1/2 cup of coconut milk.
🍀 7 or 8 Spinach leaves .
🍀 Thai Eggplant 200g.
🍀 curry leaves.
🍀 2 pieces of pandan leaves.
🍀 A few chopped green chillies.
🍀 Onion, finely chopped.
🍀 A chopped tomato.
🍀 A crushed cardamom pod.
🍀 About 2 cinnamon sticks.
🍀 1/2 teaspoon of Fenugreek.
🍀 1 teaspoon of curry powder.
🍀 1/3 teaspoon of turmeric powder.
🍀 Salt as needed.
🍀 1 1/2 tablespoon of coconut oil.
Method of making....
First, remove the stems from the Thai eggplants and slice them. Wash them thoroughly, ensuring any seeds are removed. Additionally, wash and finely chop the spinach leaves.
Next, finely chop the onion, green chili, and tomato.
Next, take a pan and place it on the stove. Add the sliced Thai eggplant, fenugreek, cinnamon sticks, green chilies, turmeric powder, curry powder, salt, fennel seeds, additional cinnamon sticks, and pandan leaves. Mix everything well.
Next, add half a cup of coconut milk to the mixture and cook for about 3 minutes.
Next, add about 1 1/2 tablespoons of coconut oil and mix well. Then, add the tomato pieces and the remaining coconut milk. Cook for another 2 minutes.
Next, add the chopped spinach leaves and let it cook for about a minute. Then, remove from heat.
This Thai eggplant and spinach curry offers both taste and nutrition in every bite, filling each mouthful with flavor and aroma. It pairs wonderfully with steamed rice, roti, or other dishes. Give it a try, and I’ll see you next time with another new recipe!
