Good morning to all my Hive friends! today, I have a delicious curry to share with you. beetroot and potato curry is a popular dish in Sri Lankan cuisine, known for its vibrant red color, which deepens with the addition of any liquid. Despite its simplicity, this curry is packed with health benefits. The spices not only enhance its flavor but also add nutritional value. the natural sweetness of the beetroot, combined with the creamy texture from the coconut milk, makes this curry irresistible. While you can make it with just beetroot, adding potatoes elevates the flavor even more. Let's see how to prepare this flavorful dish step by step.

Required Ingredients...

🍀 Beetroot 100g.
🍀 About two medium-sized potatoes.
🍀 A little chopped onion.
🍀 About two chopped green chilli pods.
🍀 About 3 cloves of garlic, finely chopped.
🍀 2 Cup of coconut milk.
🍀 About two cinnamon sticks.
🍀 Salt as needed.
🍀 1 teaspoon of chili powder.
🍀 1/2 teaspoon of turmeric powder.
🍀 1/2 teaspoon of curry powder.
🍀 1/2 teaspoon of fenugreek seeds.
🍀 1/2 teaspoon of mustard powder.

Method of making...

1 Step.
First, beetroot, green chillies, garlic and onions are washed and cleaned and cut finely. Cut the potatoes into squares.

2 Step.
Then take a cooking pot and add chopped beetroot, potato pieces, onions, green chillies, garlic and cinnamon bark. Apart from this, add chili powder, turmeric powder, salt, curry powder, fenugreek seeds, mustard powder.

3 Step.
Then mix all that and add 1 1/2 cup of coconut milk and put it on the stove and cook it for about 10 minutes. Meanwhile add coconut milk if required.

4 Step.
Then finally add the remaining coconut milk to the curry and remove it from the heat once it reaches the desired thickness.

Finally, this curry is a vibrant and flavorful dish with a perfect balance of slightly spicy flavors.
