Let's make a delicious and nutritious recipe from sweet potato in a different way.

Good evening to all my friends on Hive! Today, I prepared a new recipe using sweet potatoes in a unique way. Sweet potatoes are commonly used in various dishes, but the recipe I made today brings a special twist by combining sweet potatoes with coconut and aromatic spices for a flavor-packed meal. Sweet potatoes are indeed a nutritious type of root vegetable, and I used the yellow variety for this recipe. Nutritionally, they are rich in fiber, vitamins A and C, and potassium, offering many health benefits, including support for eye health, immunity, and heart health. So, let’s take a look at how to prepare this delicious dish!

Required Ingredients...

🍀 2 medium-sized sweet potatoes,
🍀 2/3 cup of grated coconut.
🍀 2–3 cloves garlic finely chopped.
🍀 A little chopped onion.
🍀 A thinly sliced ​​tomato.
🍀 A few finely chopped curry leaves.
🍀 1/4 teaspoon of turmeric powder.
🍀 2 Teaspoon of crushed chili powder.
🍀 Salt as needed.
🍀 Two crushed cardamom pods.
🍀 2 Tablespoon of coconut oil.

Method of making....

                                          1 Step

First remove the skin on the sweet potatoes and boil them in water for about 8 minutes

Next the boiled sweet potatos is cut into pieces.

Next, finely chop the onion, garlic, curry leaves, and tomato.

Next, take a pan and add two tablespoons of coconut oil. Place it on the stove and let it heat up. Once hot, add chopped garlic and onions, and sauté until golden. Then, add curry leaves and tomato pieces, mixing everything well to combine.

Next, add crushed chili powder, turmeric powder, salt, and a pinch of cardamom to the mixture. Stir everything well to combine all the spices thoroughly.

Next, add the grated coconut to the mixture and stir well to blend it in. Then, add the boiled sweet potato pieces, mix gently to coat them with the spices, and quickly remove the dish from the heat.
