Indian Style Egg Curry & Surprisingly A Great Hangover Cure
Hey people! ❤️ How’s it been going? This week has truly been a fun one and I cannot wait to share it with you! So as y’all know I was struggling to cope with work as of last week. I have been raving and ranting about it to anyone that would listen and honestly? I think everyone was tired of me by the end of it. 😂
All I truly needed was a break from the monotony, so I called a friend, decided to head out for a few drinks. Being the house cat that I am, of course I planned on keeping the outing short and to be back at home and in bed by 10:30pm. Surprisingly though, the night panned out to be completely different. My initial plan of having a few light drinks sank to the bottom of the LIIT pitcher that I drank like water. Amid the booze fueled deep conversations, in the craziest turn of events, I ran into my college roommate. Oh man, what a surprise that was. We spoke for a while, recalled some of our best memories in college, and then for old times sake, decided to hit the dance floor. It was like someone curated the night for me because the DJ ended up playing all the songs we used to dance to in our room when we were dumb 18-year-olds. A whole night of dancing later, I head back home, tired to the bone but extremely overjoyed with how the night turned out. I went to bed still humming the tunes to the songs, without a worry in the world.
And then the next morning, it hit me, like a goddamn truck. The hangover. The worst hangover I’ve had in a while. No, scratch that. The worst hangover ever. Period. 😫 I could not move, and my brain felt so woozy, I almost toppled off from my bed onto the floor. All I wanted to do is lay in bed for the rest of the day. But guess what? Sober me had already invited people over for lunch. There was no way I could cancel that without looking like a complete jerk. With no willpower left for grocery shopping, I had to do the best I could with everything that was left in my refrigerator. To my utter disappointment, there was nothing more than a few staples- eggs, onions, tomatoes- nothing fancy. But oh well, gotta make the best out of that, yeah?
I ended up making a humble egg curry that my friends loved, but more importantly, it cured the crazy throbbing in my head. Eggs are great for hangovers apparently. I googled it and it said something about cysteine (an amino acid present in eggs) breaking down the acetaldehyde (alcohol toxins). The science of it aside, the moral of the story is you can prep this dish while hungover. Trust me, I can vouch for it.😉

- 2 tbsp Oil
- 3 onions
- 2 tsp ginger garlic paste
- 3 tomatoes
- Water (to be adjusted according to desired consistency)
- 2 tsp red chili powder
- ¼ tsp turmeric powder
- 1 tsp garam masala
- Salt (as per taste)
- ½ cup cream
- 6 eggs
- Seasonings (pepper, chili flakes, Italian herbs)
- Finely chopped green chilies
- Finely chopped coriander leaves

- Add 2 tbsp of oil into a heated skillet and add the finely chopped onions to it.
When the onions are light pink, add in the ginger garlic paste.
Continue to fry the onions till they are a beautiful shade of brown.
- Once the onions are caramelized, add in the tomatoes, add some salt and cook till they are mushy.
Now add in some water, I added around half a cup of water, but you can adjust it as per the consistency of your liking.
Cover the skillet and let the mixture boil for around 3-4 minutes.
dd in the spices: Chili powder, turmeric powder, garam masala.
Cook for a minute, then reduce the heat and add in the fresh cream.
Now comes the slightly tricky part, break the eggs into the gravy but be careful to not break the yolk (I broke one of them, duh)
• Season the eggs with any seasonings of choice. I sprinkled some salt, pepper, chili flakes, Italian herbs, and some finely chopped green chilies for the extra zing.
Now cover the skillet and let it cook on low heat for a good 8-10 minutes.
Top it off with finely chopped coriander leaves.

Since it’s a fairly basic recipe, the caramelizing of the onions is an important step to elevate the dish.
A substitute for the fresh cream, or rather to have a slight variation in the taste would be to add coconut milk instead.
Garam masala is a ground spice powder and any spice mix of your choice can be added.
If you’re a klutz like me, break one egg into a bowl and slide it into the gravy. It reduces the chances of dropping in eggshells or breaking the yolk.
The best accompaniment is fresh bread rolls, but since I had a time crunch, I served it with some steaming hot rice.
