Cupcakes for carnival.

I made this cupcake recipe several times this year during carnivals. So I wanted to share with the friends of Hive.

Ingredients:

  • 4 eggs
  • 250g of sugar
  • 250 ml of sunflower oil
  • 250 ml of milk
  • 350g of flour
  • 16 g chemical yeast
  • The zest of a lemon

Preparation:

In a bowl, beat the eggs with the sugar until foamy.
Add the oil and milk and mix well.
Sift the flour with the yeast and add it to the previous mixture along with the lemon zest. Stir until a homogeneous mass is obtained.
Preheat the oven to 180ºC and place paper capsules in a muffin tin.
Fill the capsules three quarters full and sprinkle a little sugar on top.
Bake for about 20 minutes or until golden brown and a toothpick inserted comes out clean.
Let cool on a wire rack and enjoy.
