Recreating pasta memories
Last night's pasta salad harked back to a dish a friend introduced to me nearly 45 years ago. Simply, fresh tomato and a small tin of cream. I remember it being delicious.
Of course, I did it my way. First, I included shredded Swiss chard, wilted as I drained the pasta. Secondly, instead of cream (tinned cream is no longer a pantry item), I used homemade labneh. The tomatoes were a mix of cherry and large ones. They and the spinach (chard) came out of Sunday's bag of gifts that arrived on Sunday.
As did some of the leaves to make a salad with cucumber, home pickled olives and roasted peppers.
I was very happy with the result, and I think I preferred the labneh to the cream. The Husband, for whom this was new, declared it delicious.
Yesterday was a day of curved balls, so playing about in my happy place was soul food.
