Monday in the jar (the polite version)

That was how my Monday began. Glorious, but it should have been a warning of things to come - you know what they say about red skies in the morning... That, until I took to the kitchen, was the best part of my day.

I don't know what it is about the universe that makes Mondays Mondays. I don't hate them because I like most aspects of my work, but for some reason, they are days when I know that I should not have a to-do list that is anything other than must-be-dones. Because nothing else does. Get done. It seems that there's always some crud that rears its head for cleansing.

I have been trying to get out of the office by 6pm and last week, mostly succeeded. Last night, I didn't quite and when I did, I was not in a good space. I was grateful that all the cooking I had to do was make a batch of dough for pita breads: supper was long planned to come out of jars.

How hard is that? Not. When you "listen" properly to the instructions and shut out the other shouting that's going on in your head. I didn't and I ended up with almost the wrong proportions for everything. Fortunately, I'm sufficiently (not well) experienced to have been able to rescue the dough - mostly.

So, with a "proper" Monday behind me, I was pleased to have planned (and succeeded) our supper.

The pita breads were not entirely successful and entirely my own fault. There is dough left (a lot) which is in the freezer for next time(s), and with a thaw, will have had a little slow ferment so the dough, I hope, will be much improved...

Back to supper: it was my made-up roasted carrot salad that was the hero on a bed of rocket and topped with tzatziki.

This was my pocket pita - made very gently. The Husbands's and which he elected to manage himself, didn't. Pocket. He always claims he doesn't eat with his eyes and give a toss about presentation...

I had a feeling that the flavours would work together: the sweet roasted carrots with the spicy plum and apple cider vinegar combined with almonds and olives on a bed of rocket, and dressed with tzatziki. The combination is a fabulous winner. If you're vegan, either loose the tzatziki, or substitute with a garlicky plant-based alternative.

Usually, The Husband would have had a second helping but one was enough: the contents of one jar (200g) did the trick. Remember, that the salad, on its own, can make a meal with its almonds for protein.

It's a combination to repeat.

A good way to end a bad Monday. The week can only get better.
