Mediterranean melange

The menu headline for last night's supper was salad. It was not a warm day, and with a bit of a south easter, the evening was chilly. A salad supper appealed to neither of us. On Saturday, after a dismal market, my market pal, Barbie insisted on giving me one of her homegrown brinjals in exchange for rolls.

With slices of that and a tin of tomatoes, last week's salad in the jar became a vegetarian Mediterranean melange that was a neither a lasagne nor a moussaka.

I had two jars in the fridge and the sauteed brinjals were layered between the lentils the basil was finely chopped and sprinkled over that.

The second to last layer was a tin of tomatoes, chopped.

The cheese was an after thought and, IMO, the dish would have been as good without it and made it vegan.

I was very happy to have some comfort food. I had been cold and uncomfortable all day - with a literal pain in the neck from having been caught in a draft on Sunday. That, like most things, will pass, too!

My favourite lasagne still is a vegetarian one with lentils & brinjals, but I will try doing it this way next time to cut back on carbs, looks really yummy!
