Stuffed Cabbage Or Cabbage Rolls

Today I'm going to share a traditional recipe with you, that is pretty popular in Europe and not only. If you're interested in the history of cabbage rolls or stuffed cabbage, you can check here. It has a great variety, each region has its own and I suppose each household has its own as well. This is mine, this is what I've learnt from my mom and I'm keeping the recipe as it's suitable for the family's taste.

Speaking of recipe, this has no recipe, I mean there are no exact quantities here, you just know how much you want and that's all. I was planning to post this recipe after Christmas, but then I thought if I post it now, maybe it can be an idea for someone to use for the holidays. We usually have stuffed cabbage for almost every major occasion, like Easter and Christmas. It's an easy recipe and you only need a few ingredients.

Ingredients

  • 1 big pickled cabbage,
  • 1kg minced pork,
  • some smoked pork (can be ribs or the tail),
  • 1 onion,
  • 4 clove garlic,
  • 100 - 150g rice
  • salt,
  • pepper,
  • red paprika,
  • oil,
  • sour cream.

The pickled cabbage is the most important among the ingredients because if you don't buy the right one, you can ruin the whole dish. I like this flat one because the leaves are thin and can be cooked faster.

First you need to take off the leaves and cut that strong vein down, if there's any, to make the leaves more flexible.

Heat the oil in a pan, sauté the onion and add the crushed garlic towards the end.

Then add the rice and let it soak up the oil.

Mix the minced meat with red paprika, then add the rice and mix well.

Place a few cabbage leaves on the bottom of the pot, then place the smoked meat on it.

Take the leaves one by one, add as much meat as can fit in, fold up the edges, then roll them up.

This is how the rolls should look like.

Place them in the pot, over the meat and then add some more cabbage.

Sometimes the cabbage is bigger than it is needed and then usually I slice the rest and place it on he top.

Add water to cover and cook till the cabbage is tender. Unfortunately I can't give you a cooking time because that depends on what kind of cabbage you are using. During summer I am often using raw cabbage, not pickled and that needs less cooking time. Raw cabbage is not sour at all, therefore I'm often adding tomato juice or tomato paste, to make it a bit sour.

Serve with sour cream, while still hot.

As I mentioned at the beginning of my post, this is a well known dish in Europe and not only. You can make vegan rolls as well, replacing the meat with whatever you see fit.

They say that the eyes eats first before the mouth hahaha, I love this recipe though I have not heard or seen it before. If I have the opportunity to see it I will love to eat it . Nice recipe, nice dish . Merry Christmas.

Everyone may easily learn how to follow this step-by-step guide.
I've never seen stuffed cabbage before, and I'm eager to prepare it because it seems so straightforward.

This is so perfect for occasions. Meat plus that cabbage. This dish is something similar from the lumpia here in the Philippines but the one used to wrap is a wrapper and the fillings inside are mostly vegetables, can add some meat too.

This' really incredible, you just prepared something very savoury which I know must be tasty but the case is that I mayn't get exactly what you prepared over here else I would have gone for it to see actually how it tastes. Nice recipe Ma and complement of the season.

Thank you @davchi2 for the nice words. You don't have to do it exactly the same as me. You can use fresh cabbage and whatever filling you like. Beef for those who don't eat pork for example.

These look amazing! Really delicious! I can imagine the flavor, the smell! Ohhh! The hour is not good seeing your recipe. Now I really want cabbage rolls. I wont do any, but NOW, because of you, I only hope my mom will make some.
I'm not writing this just for the sake of writing, but yours look really really delicious! Ohhh and those smoked bones. I'm sure mom is going to make some, as there's no Christmas without sarmale or sărmăluțe, depending on the tradition at your part of the world. I wish I could send you some, but I suppose we need to wait for the shipping method to be invented.

Well, I talked today with my mom and she said she's been preparing just today the cabbage rolls. Tmr she'll be making these hahahah! Perfect timing cause my family of 3 are going to spend tmr night there so .... Sarmale, here I come! 🤣 Thanks to Erikah, my mom will be out of sarmale in no time. LOL. That would be...weird. and impossible though!

Hmm now, you certainly are a glutton for punishment.

Let me see...I like those stuffed cabbages...Also, you know that potato thing with cream and garlic baked with melted cheese on top? It's a French thing I think. Dauphinoise? So yum!

I'm going to throw in a stake because why not, and also some veggies, like umm...green beans, carrots and zucchini...I reckon Japanese tempura style will be cool, dipping sauce of course.

Now for the main course(s)...

Lol, just kidding...Just add in some garlic bread, arancini balls, maybe a lasagne and a pizza or two and things will be about right.

Now...dessert...

EDIT: Sorry, forgot to add in the Thai cashew nut chicken and vegetarian spring rolls.

It is a recipe that is not complicated to make and it looks delicious. I am tempted to replicate your recipe in the near future but with chicken or fish. Thank you for sharing this dish, the children with autism for whom I cook will surely love it.

Wow, this dish is also in our drawer, we just add some aromatic vegetables, such as parsley, leeks, and a little tomato paste. But the way of wrapping the cabbage is exactly the same. I found it interesting. They say "Dolme".🙂🙂
