Winter Meals = Comfort Foods

With the colder weather settling in, I've taken to cooking more family favorites. In a previous post I shared photos from an Italian Bread I made. https://www.liketu.com/@epodcaster/baking-bread-on-a-cold-day

Well that bread is so good we eat it with just about everything. It's great toasted with butter and jelly. There is something about the italian herbs and garlic baked into the bread that adds flavor to the butter and jelly. It sounds odd, but trust me it totally works. So while that is NOT pictured here, I do have a pic of a breakfast I made recently. Chorizo, onion, and egg on top of a toasted slice of the above reference Italian Bread. The fact is once I bake bread, I find so many ways to add it to meals. My family loves it!

The next pic you'll see if a chicken, brocolli, and pasta meal. This was served hot. Although it could be eaten the next day cold. It works both ways. Which is what I like about pasta meals in general. The flexibility which sort of makes it almost like a new meal instead of what it is which is leftovers the next day.

The final picture is one that has become a favorite for my extended family as well. It's a chicken, sausage, and okra jumbalaya over a bed of white rice. This is the meal I have to be sure to make extra in order to send bowls to my extended family. To me that is a sign of a successful meal. When people outside of your immediate family look forward to eating it, too.

Favorites in our home include Paprika Goulash with dumplings, Pot Roast (cooked for hours so the oven heats up the house), Homemade Beef Vegetable soup, and my son's favorite, "Spaghetti" Casserole (layers of sauce, pasta - but I usually do not use spaghetti, ground beef, mozzarella, with a thick layer of cheese on top, sprinkled with parmesan, then baked).

I've never made Goulash of any kind. I'll bet its good. Everything else I've made in some form or fashion and are excellent wintertime (or anytime) meals.

My mother used to make Austrian Goulash (Paprika Goulash) with dumplings (my dad called them lead balls, because they weren't light and fluffy).

One day I was reading a book to my children (we were doing a study on horses) called "White Stallion of Lipizza" by Marguerite Henry. They mentioned this same goulash in the book, so I decided my children would finally experience it and I made it for dinner.
