Home sweet home: My favorite local Dish

(Edited)

In a continent called Africa, lies a country know as the giant of African, Nigerian. So guys welcome to Nigeria my home country packed with different varieties of local dishes to enjoy from. Although am not the picky-picky type when it comes to food because I love to try out almost any thing food that comes my way of which it is more like an adventure I will say. Growing up also my neighbors had to even nicknamed me "Agric Chicken" because I never seize to stop chewing my mouth every now and then which automatically made me a foodie foodie from childhood. 🤣

But then despite trying out different Nigeria foods and still on the adventure, savouring it taste and flavors, I would want to pick rice of which it is one of my most enjoyed dish but then I'll pick the Almighty Egusi soup (melon soup). 😊 Egusi soup is made with melon seeds and it has numerous ways of preparation. A lot of people will prefer to fry their egusi while others don't so just do what works for you.

And now to the origin of this soup

This soup originated from to the western Nigeria but was later embraced by the eastern people of the country and then it spread like wild fire reaching all regions of the country and today egusi soup is eaten by 80% if not 90% to 99% of the citizens. Like I had earlier said, we have different ways of preparing this soup and this is how I just love to prepare mine.

Ingredients

*Melon seed
*Palm oil
*Vegetable leaves
*Stock (fish or meat)
*Crazy fish
*Seasoning (salt and Maggi)
*Onion

Procedures

*Blend your egusi after blending, I love to add
in water and onion to form paste with the
blended egusi after which I set-up my fire,
place cooking pot and add in palm oil.

*When the oil is heated, I go in with chopped
onions after which I scoop in the melon paste
in hot oil and allow to fry while I keep stirring.
When it's completely fried I go in with water,
After which I add up my seasoning, crayfish
Allow to boil for a minute or two then I go in
with my other stock lastly vegetables and it's
Ready.

Note: This is just a brief method of preparing the soup but when cooking it you want to do it with love because they say it also add to the taste of the meal but that's just by the way. 😂 This special soup is eaten with different swallow of your choice be it fufu, pound yam, semolina and so on just pick what you like best and enjoy. 😊

So egusi soup and fufu is my favorite and yes I can prepare it also. 😊

Glad you also like the food.
It sometimes like that, our taste buds changes overtime and what we hate then we like now and what we like we really don't like them again.
