Delicious brown rice with curry, rosemary and aubergine. [Eng][Esp]
Hello to all my @plantpower(vegan) friends. I hope you are well and that all your projects are going well. Today I'm sharing with you a very special rice recipe that I recently prepared to accompany my lunch. I loved this simple, delicious and fibre-packed preparation.
For some time now, brown rice has been my favourite cereal to buy, although it is sometimes in short supply in my city. I love eating rice, especially when it is prepared with vegetables. This time, taking advantage of the fact that I had aubergine at home, I wanted to add it. I also gave it a different flavour with curry and a special touch of rosemary. This recipe yielded three servings.
INGREDIENTS
- 1 cup brown rice
- 1 medium aubergine
- 1/2 teaspoon curry
- 3 cloves garlic
- 1/2 teaspoon salt
- 1 sprig fresh rosemary
- olive oil
- 3 cups of water.
PREPARATION
I proceeded to wash the aubergines, cut them into pieces and let them soak in salted water. Then I peeled and crushed the garlic cloves. I took a frying pan and added a little olive oil to fry the garlic without letting it burn. Once it started to smell so delicious, I added the brown rice and left it for 2 minutes over low heat, stirring continuously. After the time was up, I added the previously drained aubergines. I mixed and let it cook for 2 more minutes. During this time, I added a sprig of fresh oregano, the curry, salt and water.
I let it cook over medium heat for approximately 10 minutes. After 8 minutes, I lowered the heat and covered this delicious brown rice. Once the time had elapsed, I let it rest. When serving, I garnished it with fresh rosemary. This rice was very delicious; I loved the combination of flavours from the curry, garlic and rosemary. It was really crunchy, as the consistency of the rice grain is amazing, you could feel the grains loose as you ate it.

Hola a todos mis amigos de @plantpower(vegan). Espero que se encuentren bien y que todos sus proyectos estén marchando con éxito. Hoy les comparto una receta de arroz muy especial que preparé recientemente para acompañar mi almuerzo. Me encantó esta preparación sencilla, deliciosa y llena de fibra.
Desde hace un tiempo, el arroz integral es mi preferido al comprar este cereal, aunque en ocasiones escasea en mi ciudad. Me encanta consumir arroz, especialmente cuando está preparado con vegetales. En esta oportunidad, aprovechando que tenía berenjena en casa, quise agregarla. Además, le di un sabor diferente con curry y un toque especial de romero.Esta receta rindió para tres porciones
INGREDIENTES
• 1 taza de arroz integral
• 1 berenjena mediana
• 1/2 cucharadita de curry
• 3 dientes de ajo
• 1/2 cucharadita de sal
• 1 Ramita de romero fresco
• Aceite de oliva
• 3 tazas de agua.
PREPARACIÓN
Procedí a lavar las berenjenas, cortarlas en trozos y dejarlas remojando en agua con sal. Posteriormente, pelé y trituré los dientes de ajo. Tomé un sartén y agregué un poco de aceite de oliva para sofreír el ajo sin dejar que se quemara. Una vez que comenzó a dar ese olor tan delicioso, agregué el arroz integral y lo dejé por 2 minutos a fuego bajo, mezclando continuamente. Pasado el tiempo, agregué las berenjenas previamente escurridas. Mezclé y dejé cocinar por 2 minutos más. Durante ese momento, agregué una ramita de orégano fresco, el curry, sal y agua.
Dejé cocinar a fuego medio durante aproximadamente 10 minutos. Al cumplirse 8 minutos, procedí a bajar el fuego y a tapar este delicioso arroz integral. Una vez transcurrido el tiempo, dejé reposar. Al servirlo, lo decoré con romero fresco. Este arroz quedó muy delicioso; me encantó la combinación de sabores del curry, ajo y romero. Realmente crujiente, ya que la consistencia del grano de arroz es increíble, se sentían los granos sueltos al comerlo.

Thank you I'm glad you liked my recipe, at the moment aubergine was the only vegetable available. But I like flavoured rice so the curry was spectacular and delicious. Try making this recipe I'm sure you will like it.
