Stir-fried spicy shrimp paste with banana heart
Today I want to share a recipe that is certainly easy and economical, because I have it at home. It so happens that the banana tree behind the house is bearing fruit that can be used to make banana heart dishes.
I feel very lucky because in my yard there are many plants that can be processed for dishes, one of which is a banana tree, every part of the banana tree can provide benefits such as banana stems (young banana stems) cooked as vegetables, the fruit can be eaten directly or processed into cakes or cooked as vegetables. The leaves can also be used to wrap food.
However, not everyone knows that not all banana tree stems can be cooked, as well as banana hearts, one example is the stem and heart of the jackfruit banana, it tastes bitter if consumed, that's what my mother said. In addition, I have also read that bitter banana hearts contain high tannins so they cannot be consumed.
In my area, banana stems are usually cooked on big days such as weddings, funerals and others. Maybe another time I will cook it. Because on this occasion, I want to process banana hearts. You may be familiar with banana hearts. But did you know? Not only used as a side dish, there are many benefits of banana flower if we consume it. Among them are a source of vitamins and minerals and maintaining digestive health.
Unfortunately, banana flower is often thrown away and becomes an overlooked ingredient because it is considered useless. In fact, there are many benefits that can be obtained through various delicious preparations, including stir-fried banana flower shrimp paste.

Ingredient needed:
- 3 pieces of kepok banana flower
- 1 stalk of lemongrass (crushed)
- 2 bay leaves
- 1/2 tsp flavoring
- 1/2 tsp salt
- 250 ml Water
- Sufficient cooking oil for sauteing
Fine spices
- 1 shrimp paste
- 20 small chilies
- 7 cloves of shallots
- 3 cloves of garlic
- 2 tomatoes
Preparation:
First: peel the outer skin of the red banana flower until only white/yellow (young part) remains. I peeled it outside the house because I was afraid of the sap dripping, prepare a container filled with water, chop the banana flower then cut it to get a small shape so that it is easy to soften when cooked. Set aside
Second: Prepare fine spices, wash all ingredients and cut into small pieces, put them in a blender (do not blend too finely)
Third: Heat oil, pour spices into a frying pan, add bay leaves and lemongrass. Saute the fine spices until fragrant, add a little water, add the banana flower, stir evenly then cover for about 10 minutes or until soft. Add salt and flavoring, don't forget to correct the taste. Remove and serve.
The dish is finished..
Very simple, isn't it, but so appetizing, it tastes very good, the texture is soft when chewed and of course it is also beneficial for health. Therefore, it is a shame not to miss it, and there is nothing wrong with starting to make banana flower part of the delicious dishes on your dining table.

yes, maybe you don't like the sharp smell of shrimp paste. just like me who doesn't like the smell of my hands after eating it haha
