Quatrinelle with refried potatoes
The potatoes are boiled in their skin and then peeled, mashed or cut into small pieces. In a pan, brown a clove of garlic in extra virgin olive oil and then remove it, add the bacon and fry it and, finally, the potatoes and salt.
Everything is flavored together. Then you make the dough with water and flour and cut it into small squares.
It is cooked in plenty of salted water, and then drained, adding it to the pan where the seasoning is, adding a little cooking water. Chili pepper if you like it.
It is a very simple dish of great goodness.
