Kathal ki Curry – A Sunday Delight for the Family

Sundays are all about comfort food, and one dish that has always been a favorite in my family is Kathal ki Curry. It's a perfect blend of flavors and textures, with tender jackfruit soaked in spices that give it a rich, aromatic taste. This is a recipe that brings everyone together around the table. Here’s how I make this delicious curry that is sure to become a part of your Sunday routine too.

Ingredients:

500g kathal (raw jackfruit)

2 tbsp cooking oil

Whole garam masala (cloves, cinnamon stick, cardamom)

4 medium-sized onion, finely chopped

3 tbsp ginger-garlic Paste

2 tbsp cashew and almond paste

1/2 tsp red chili powder

1/4 tsp turmeric powder

1 1/2 tsp coriander powder

Little bit tamarind

Salt, to taste

1/2 tsp garam masala powder

Water, as needed

Step by Step method

1.Prepare the Kathal: Start by thoroughly washing and cleaning 500g of kathal (raw jackfruit). Cut it into bite-sized pieces, then boil them in water until soft. Once cooked, drain the water and set the kathal aside.

2.Fry the Kathal: In a pan, heat 2 tablespoons of oil and add some whole garam masala (cloves, cinnamon stick, and cardamom). Let them sizzle for a moment, releasing their fragrant oils. Add the boiled kathal pieces and fry them until they turn slightly golden and crispy. Once done, remove them from the pan and set aside.

3.. Make the Masala: In the same pan, add a bit more oil if necessary. Heat it and then add finely chopped onions. Sauté them until they turn light golden brown. Now, add ginger-garlic paste, followed by a paste of onion, and cook for a couple of minutes until the raw smell disappears.

4.Spice It Up: Once the masala base is cooked, add the dry spices—1/2 tsp red chili powder, 1/4 tsp turmeric powder, and 1 1/2 tsp coriander powder. Stir well until the spices are roasted and the oil starts to separate.

5.Combine Kathal with Masala: Now, add salt to taste and mix the fried kathal into the masala. Stir gently, and let it cook for about 5 minutes, allowing the kathal to absorb all the flavors.

6.Simmer to Perfection: Add a little water (according to the desired consistency) and let the curry simmer on low heat for another 5 minutes, letting all the ingredients blend together.

  1. Final Touch: To finish, sprinkle 1/2 tsp garam masala powder over the curry and give it one final mix. Cover the pot, and turn off the heat. Let it rest for a few minutes to allow the flavors to intensify.
