Saltimbocca Alla Romana
Saltimbocca is Italian dish of thin slices of veal and ham flavored with sage, rolled together, and sautéed in butter except we tried beef. When I say tried I mean a real Italian cook was showing this so there was really no trying. It was a slam dunk the whole way.
For me it is a bit of work for the result but I must say it was an amazing lunch for a work day. The flavors were excellent and contained very little salt other than the ham so the an added white wine really came through. I have to admit I'm spoiled by the access to fine Italian cooking right now but I will get back to my hamburgers eventually!
