Vegan Rice Bowl, I Need High Fiber From 'Genjer'
Hello everyone, do you know about 'Genjer' which is usually called Limnocharis lava? Here, we call it genjer but I don't know how to write 'genjer' correctly in English. If you want to know, you can search for it with the keyword 'Genjer'. At least you can know what the plant I mentioned grows and looks like.
I don't know why genjer is a food ingredient, especially as fiber which plays quite a role in the vegetable menu in Indonesia, because genjer grows wild in swamps or fresh waters, is often used as fish food and is a plant usually used by farmers to protect the condition of pool of fish.
You can see the real shape of genjer in the photo below, I took it before cooking it with delicious spices. Usually called old is gold, because adults over 40 years old really like this vegetable. In fact, my father often asked me to cook genjer even though it was only stir-fried in oil.
In my opinion, genjer is very similar to asparagus, it is elongated and green. Genjer is often used as fresh vegetables even though it is only eaten with warm rice, but I have a brilliant idea to take genjer to the next level this time. Ingredients:
- 1 bunch genjer
- 5 cloves of garlic
- 1 tsp soy sauce
- 1 tsp sesame oil
- 3 pcs chili
- Complements: salt, black pepper and sesame
- 1 cup of rice
How to make Genjer Garlic Sauce:
- The first step is to gather intentions, so that everything runs smoothly. Prepare all the ingredients and clean the genjer from remaining dirt, because the genjer comes from a slightly dirty pond. Then I cut it to a length of around 10-13cm, I thought this would make the genjer more beautiful when plating in the bowl.
- Prepare the garlic and chilies, slice them slowly so they can still be seen properly. My suggestion is to mince the garlic so it still has a better texture.
- Roast genjer on a fairly hot pan without oil, suitable for those on a diet.
- Take a little oil, just 1 tsp, then I pour in the garlic and chilies to sauté until slightly brown. Then pour sesame oil, salt, pepper and soy sauce. Stir well, if there is not enough water, add just a little.
- Prepare the rice and arrange it with the grilled genjer, then pour the garlic sauce over the genjer. Very delicious eaten still warm! You can add fried tempeh if you need high protein.
