Spiced Bamboo Shoots Curry

Did you know that bamboo shoots (Indonesian; REBUNG) can be made into delicious food. Bamboo shoots are bamboo saplings which are still very soft, slightly yellowish white in color which have extraordinary benefits. In Indonesia, bamboo shoots are often used as a special dish, made as a vegetable as a source of fiber.
Bamboo shoots are one of my and my husband's favorite foods, as bamboo shoot lovers, we like to buy bamboo shoots at the market if they are available. Actually, bamboo shoots are a bit hard to find because they are seasonal, so usually they can only be cooked a few times a year and become part of our diet.
What I like about bamboo shoots is that they have a texture similar to young coconut meat, they are very soft and have their own characteristics. Bamboo shoots also have a special taste and smell, best suited for cooking with lots of spices, thereby adding to the taste of the bamboo shoots.
Maybe for some people, bamboo shoots are very strange, because they have a slightly strange smell, even my sister doesn't like bamboo shoots, she says bamboo shoots are not vegetables, it's just bamboo, not a food ingredient.
I know bamboo shoots from my mother, she likes to make bamboo shoots and stir-fried with spices and coconut milk. I can't help but drool just imagining its shape. Best mixed with some green vegetables, adding variety to the contents of sautéed bamboo shoots.
Well, this time, I will introduce you to an unusual food menu, bamboo shoot curry with thick and savory spices, perfect for eating rice with friends, especially eaten together with fried tempeh which will definitely increase your appetite. To make the spice bamboo shoot curry, there are several ingredients that will be used, apart from that, always follow step by step in making the spice bamboo shoot curry, use quality ingredients, Hivers!
Ingredients;
- 200 gr bamboo shoots (washed and soaked in water)
- 150 gr long beans
- 3 cloves of shallots and 3 cloves of garlic
- 5 pcs red chilies
- Ginger, turmeric and galangal
- Orange leaves, lemongrass and bay leaves
- 2 pcs kandis acid
- 1 pcs Lime
- 65 ml of thick coconut milk
- 200 ml water
How to make spiced bamboo shoot curry;
- Wash the bamboo shoots clean, then soak with water and 1 lime juice. After 10 minutes, drain.
- Grind the shallots, garlic, ginger, turmeric and galangal, then stir-fry with 1 tsp of vegetable oil.
- After 5 minutes, add the lemongrass, lime leaves and bay leaves into the wokpan, stir until well blended.
- Add the long beans and 200 ml of water, then after the water boils, add the bamboo shoots.
- Stir all the ingredients and wait until the vegetables wilt, then add the coconut milk, cook for 5 minutes and turn off the stove.
- Spicy bamboo shoot curry is ready to be served!

I see fresh bamboo shoots in Chinatown but never buy it. I only have had the canned ones in a stir fry. Now I know what I can do with it. I just don't know about kandis acid. It looks so delicious. I wish I could have some right now.
