Pineapple Kombucha

One of our endeavors as humans to stay healthy is to maintain a healthy diet, exercise and reduce stress. One good effort is to minimize eating foods that are high in animal protein, eating fruit and vegetables is a very good alternative. But, sometimes eating fruits and vegetables is also not enough to maintain our health, especially digestive health.
The digestive tract has its own bacteria, so it can digest properly. The digestive tract is one of the important organs in keeping the body healthy, so that the metabolism in the body can work properly. As a diabetic, I become more worried about my body, especially digestion, moreover I have difficulty digesting and producing feces, sometimes even vegetables and fruit are not enough for that.
Yogurt is one of the keys to improving my digestion, but yogurt in Indonesia is still made from cow's milk. The difficulty of becoming a vegan in Indonesia is because there are so few plant-based products that appear on the market, in fact it's almost hard to find, especially plant-based yogurt. Maybe because the majority of vegans in Indonesia is still very small.
I have a good solution to replace yogurt for Indonesians who have difficulty finding fermented drinks to increase good bacteria for the digestive tract. Kombucha is the solution for that, moreover kombucha is very easy to ferment at home. I often discuss many things about kombucha, you can see some of my previous posts about kombucha.
Keep in mind, that kombucha is very good for the digestive tract, there are good bacteria that are needed by the intestine and that is owned by kombucha, so that kombucha can play an important role in our lives. I've been consuming kombucha for the past 4 months, there are lots of good benefits for me, I'm very happy to know kombucha.
I have tried various flavors so that kombucha becomes a fermented drink with the best taste, kombucha has a smell that might be a bit disturbing, but it can be handled very well. A while ago, I tried making kombucha with various flavors, such as berry, kiwi, apple and pineapple. For this time, I tried kombucha with pineapple flavor.
Pineapple is a fruit that belongs to a tropical country, Indonesia. Pineapple is a fruit commodity that is always available in the area where I live. What's more, North Sumatra has the Sipahutar region, which has agricultural products specifically for pineapples that are of very good quality, sweet and sour in taste which is a favorite of many people. Pineapple from the city of Sipahutar has many advantages, one of which is that it has enough water which is very sweet like sugar.
This time, I bought sipahutar pineapple which is sold at a traditional market near my house, the quality of the pineapple sold is indeed different from other places, I plan to make pineapple kombucha from sipahutar pineapple, this is the first time I have made kombucha with pineapple flavor.
There are several things needed to make pineapple kombucha, such as 2 liters of ready made kombucha which I have fermented for 14 days. I always like to harvest kombucha on the 14th day because it has a sour taste, so if it is mixed and fermented with sweet fruit it will have the maximum taste. Because the pineapple I have has a distinctive sweet taste, so it's a perfect combination.
For 2 liters of kombucha, you usually only need 1 ready-to-use pineapple, the pineapple must be of good quality, don't let any rotten parts because it will affect the taste and smell of the kombucha. After peeling, the pineapple is in a blender to be mashed as closely as possible so that it is easily fermented very well by bacteria.
It should be noted that kombucha needs fruit that has a sweet taste as food for fermentation, the results obtained will be good too. After being mashed, the pineapple is mixed with as much as 20% of the raw kombucha that will be used. Then packed in a glass bottle that has a very tight lid. After that it is fermented for 2-4 days, depending on the weather in your area. If the weather is cold/rainy, the fermentation is carried out for 4 days, if it is in a hot area, it takes only 2 days. Don't forget to open the kombucha bottle cap on day 2 so the glass bottle doesn't break.
I got 6 bottles of 250 ml kombucha and will be stored in the refrigerator, can be consumed for the next 12 days. Usually I drink 125 ml of kombucha per day, it helps me in the digestive tract. Besides being useful, kombucha is a drink that can replace the coca cola drink that I usually drink, there is a refreshing taste of sparkling soda and fruit. Want to try my homemade kombucha?
