Pergedel Potato

Hello everyone,

Who likes potato? I think everyone likes potatoes, a food source of complex carbohydrates for the body. I really like potatoes, the texture is like a cloud when used as mashed potatoes. Potatoes are also a food ingredient that is easy to make into a dish, for example making potatoes one of the ingredients for making potato martabak or potato fritters which are one of the interesting dishes from Indonesia.

Potatoes are easy to get, I think the whole world has potatoes to grow and agricultural commodities scattered throughout the country. This is what makes potatoes in great demand by many people. Potatoes can also be processed into dishes that are simple to make, but very tasty to eat.

Talking about potatoes, earlier I mentioned a type of food called pergedel, maybe you are still very unfamiliar with that name. Yes, food in Indonesia is not well known, even though it has a great chance of becoming food that is in demand by many people. So, I want to introduce to the world, there is a delicious food called 'pergedel'.

Pergedel is one way for me to enjoy potatoes in another way, especially when paired with Soto Medan. Yesterday I promise you to discuss how to make pergedel potato with you, so I'm keeping that promise now.

It's not difficult to make pergedel potato, I think it's almost the same as mashed potatoes, but it's fried again to get a crunchy texture on the outside and very soft to chew. So, the ingredients for making pergedel are also not difficult to find. I used some available ingredients, one of which is the celery that I have in my garden.

Pergedel Potatoes
The Recipe


Ingredients;

  • 250 gr of potatoes (choose potatoes that are cooked, no green and rotten parts to get the right texture of potatoes in making chunks)
  • 3 scallions and 4 celery leaves
  • 6 cloves of shallots and 3 cloves of garlic

  • The oil for frying
  • Salt, pepper and mushroom stock

How to make pergedel potato;

  • If you know good quality potatoes, namely potatoes that are yellow and large in size. After getting a good potato, you can wash it to clean it from the rest of the dirt attached, then peel the potato skin and cut it into cubes.

  • Heat the oil on a wokpan filled with oil, fry the potatoes in a deep fry so that the potatoes are easy to cook perfectly.

  • After that, thinly slice the shallots and garlic, then fry after frying the potatoes.

  • Fried potatoes can be put in a large bowl then I put fried onions, salt, pepper, mushroom stock, leeks and thinly sliced celery leaves. I use a glass tubular to mash the potatoes. This is an effective way to make pergedel potato.

  • After everything becomes smoother, the shape of the curls becomes round and flat. After that, heat the oil to fry the pergedel.

  • Before putting it into the wokpan for frying, first grease the pergedel with oil.

  • Pergedel potato are ready to be served as a side dish!
