Pandan Grated Coconut Martabak

Happy greetings to all of us, especially the new year's holiday which will arrive soon, counting backwards to get through this very long year 2022.
This year means so much to me, I felt a lot of happiness and bitterness this year. So very deep, the year I lived with difficulty, even until the end of the year which was really very painful. Happiness and sorrow certainly go hand in hand, because there are no factors to measure happiness without sorrow being a parameter. I hope the next year will be very good for me and you, Hivers.
To enjoy this year-end holiday, I prepare lots of dishes to entertain myself and also for those closest to me. Seeing a happy smile while eating our food is a very valuable happiness, so the hormone oxytocin makes us more excited with happiness.
You know that I am a diabetic who is struggling to live a healthy lifestyle, it is a tough challenge for me right now. I really like cooking, kitchen and cookware is a passion for me, where I make a masterpiece. Making a variety of delicious foods to serve with the family, warm even if it's just a meal. Food is a language, which makes everyone happy because of a special meal, when the food arrives, body language is automatically emitted.
I decided to keep cooking, even though it's a tough thing, of course I will be tempted by cooking myself, but it's okay, as long as I can control it properly, I have to be able to cook, for the sake of my husband and family. This afternoon, I'm planning to make something delicious, using the available ingredients. I really want to make something out of grated coconut, I have some grated coconut mixed with palm sugar. I got it from my mother-in-law, she made a traditional snack and gave me some 'coconut core', that's what it's called in Indonesia.
So, I will make this coconut core into a traditional snack, typical of Indonesia. Pandan grated coconut martabak, looks like an omelete which has a sweet taste, but is very different. For that, I will make pandan grated coconut martabak in my way, this snack is so simple, it's so easy to cook at home.
To make Pandan Grated Coconut Martabak, there are several ingredients that will be used, besides that, always follow the step by step in making Pandan Grated Coconut Martabak, use quality ingredients, Hivers!
Ingredients:
- 125 gr of medium protein flour
- 4 gr instant yeast
- 50 gr sugar
- Grated coconut with palm sugar
- Vanilla extract
- Pandan paste.
- Salt
- 100 ml of water
How to make pandan grated coconut martabak;
- Weigh the flour, then put it in the mixer bowl. Mix with 4 grams of instant yeast, stir until well blended.
- Add water, salt, vanilla extract, sugar and 3 drops of pandan paste. Stir with a mixer at maximum speed.
- After the mixture is well mixed, let it rest for 1 hour. Make sure there is a lot of froth that expands, a sign that the yeast is still very active and will make perfect martabak.
- Heat the non-stick wokpan, then pour it little by little, adjust to your liking.
- The dough will have a lot of holes, that means it's ready to be shaped. I used a pastel mold to form pandan grated martabak, then filled it with grated coconut with palm sugar.
- Pandan grated coconut martabak is ready to be served!
