Onde-onde Purple Sweet Potato

Hello everyone, Welcome.
I saw someone's post on social media, saying that there was a food that received a Michelin star in Bangkok, made from sticky rice flour and rice which was round and fried. I think it's like typical Indonesian onde-onde which is also famous for its sweet and savory taste.

For some reason, when I saw it, I became interested in making it. Onde-onde which has fillings such as red bean or mung bean, in my opinion it is a traditional cake that is perfect to accompany the day. Here, who likes snacks like this? I like all traditional cakes and it is very interesting to discuss.

Initially, looking at some of the ingredients in the kitchen and using them was a brilliant idea. I prefer making it rather than having to leave the house to buy food, that's one of the saving tips too. But, of course there is energy that I have to expend to make snacks. It's enough to pay for 3 bites of onde-onde which I will eat later.

Onde-onde is a unique traditional cake, like a bomb. Why? Because there is a filling in the middle which makes the taste even more explosive when bitten. It's crispy on the outside because it's cover with sesame and a sweet combination of flour, but there a slight savory taste because it's fried and given a little salt. Are you interest in trying it?

It's called onde-onde, because it's round and small, I don't know why it's called like that, I just know it's a traditional cake that I can easily find at fried food merchants. One of the mandatory snacks to buy when snacking on fried foods. Are you the same as me?

Wait, before we discuss the recipe, this time I made purple onde-onde. Do you know one ingredient that will give food a purple color? Exactly right! I added purple sweet potato as the main ingredient in making onde-onde this time. More curious, right?


Purple Sweet Potato Onde-Onde
The Recipe


Ingredients:

  • 100 gr purple sweet potato
  • 100 gr sticky rice flour
  • 50 gr rice flour
  • 100 gr sugar
  • 75 grams of mung beans with the skin removed
  • Sesame (I used black and white sesame)
  • Water and oil for frying

How to make onde-onde:

  • I made the mung bean filling first, because this filling needs to wait a long time to cool and be easy to shape. The method is to boil mung beans that have been remove from the skin, then boil for 20 minute, when the water has subsided, then add sugar and stir until it forms a paste. Wait for 10-20 minutes so that the paste cools and is easy to shape.

  • Boil sweet potatoes that have been peeled and cut into small pieces, so they cook quickly and are soft, then crush them using a fork so they can easily be mixed with flour.

  • Mix rice flour, sticky rice flour, 30 grams of sugar and purple sweet potato to mix, add a little water so that it becomes one piece of dough that is easy to shape. You can see the texture as in the picture below.

  • Take a little dough and fill it with paste, then cover it with the same dough and shape it like tennis ball.

  • Add a little water to the surface of the mixture and pour sesame seeds on the outside of the onde-onde, fry over low heat and drain the oil when cooked.
