Grilled Chicken With Sambal Pecak Recipe

It's very important to set a target at the end of each year, because it will help us to be better. At least we will be better at least for ourselves.
Preparing a food menu to welcome the new year is no less interesting than preparing a resolution, right?
Last week I read @qurator Hive Top Chef post this week with the theme of grilled chicken which is a favorite food to welcome the year. Usually grilled chicken is a mainstay of the menu to celebrate New Year's Eve, while relaxing and chatting with family or friends.
Did you know that this menu is a menu that will be searched for a lot on everyone's Google homepage in the new year. You will find a lot of varied menus, ranging from traditional recipes to simple recipes.
I have a mainstay menu for me to prepare for a family party event to welcome 2022 this time. This recipe is a traditional recipe. Although the recipe is traditional, but to cook it also has easy steps.
In addition to the grilled chicken recipe, I also prepared chili sauce which is suitable for grilled chicken. Incidentally in my area, the price of chili is very cheap, which is $ 1.2 dollars for 1 kg of red chili. Cheap isn't it?

Grilled Chicken Sambal Pecak Ingredients:
- 500 gr chicken (I chose the thigh)
- 200 gr red chili
- 50 gr cayenne pepper
- 10 cloves of red onion
- 4 cloves garlic
- Tomato
- Turmeric
- Lemongrass
- Galangal
- Ginger
- Basil leave
- Bay leaf
- Lime leaves
- Lime
- Coriander
- Hazelnut
- Salt and sugar
- Soy sauce
- Kandis acid
How to Cook Grilled Chicken Sambal Pecak
- Wash the chicken thighs, then add the lime juice and salt. Wait 10 minutes then rinse
- Puree turmeric, coriander, red chilies, cayenne pepper, shallots, garlic, galangal, ginger and lime leaves. Once smooth, pour in a non-stick wok pan. Saute for a while.
- After that, add the chicken and then wrap it with ground spices, add a little water, kandis acid, salt and sugar, taste correction. Cover and cook for 10 minutes until the spices absorb into the chicken. After that, remove the chicken and put it in a bowl. Leave the spices still in the wokpan, then add soy sauce and pour into the bowl with the chicken.
- Heat the grill, then give a little butter. Place the chicken on the grill. Bake until browned, and coat with traditional spices. After that remove it when it is cooked.
- To make the chili sauce, puree the red onion, red chili and cayenne pepper. Add a little salt. Beat until smooth.
- Add one tomato, puree and squeeze 1 lime.
- Put the basil leaves and grilled chicken.
- Grilled chicken sambal pecak is ready to be served.
Easy is not how to make it?
Although traditional, this dish is very delicious and easy you know.
