Fried Greenpeas With Garlic Dipping Sauce
I got a brilliant idea when I went to a typical Korean restaurant and found food that made me fall in love at first sight. No, it was falling in love at first bite. Its feel like, I discovered a completely new thing in my life and my heart started beating faster.
Not that this isn't the first time, but this is what I was looking for. Food that is not very healthy, because it is deep fried, but this can really be love food. The real meaning of love food is that you love but don't have to meet often. What a plant based food journey.
Before naming it, I didn't even know what menu I ordered. But it seems like this name is very suitable, fried greenpeas. Because it's completely fried and it's very crispy. That's why, when I took the first bite I fell in love.
Green peas are very easy to find anywhere, in traditional markets, supermarkets, ranch markets, especially in places that sell fruit and vegetables. Green peas are easy to find and this time I harvested them at my brother's house. He has a little land that he uses to grow greenpeas.
I got 2-3kg greenpeas. I really like harvesting things in the garden, especially since it's free and I can take it home and use it as stock. Even though you harvest it in the heat of the day. The sun was really dazzling at that time. But, I can take these greenpeas home very fresh.
Ingredients:
- Green peas
- 3 cloves of garlic
- 1 clove of onion
- 1 segment of ginger
- 1 tomato
- 3 pieces of red chili
- 1 piece of leeks
- Mushroom broth
- 1 tbsp cornstarch
- Vegetable oil and 1 tablespoon sesame oil
How to Cook Fried Green Peas:
- The green peas that I got, I washed and cut them into 20 cm lengths. I think this will fit in my wokpan.
- I dip it in a bowl of flour with water and it will give a crunchy effect to the green peas. Deep fried and get crunchy green peas in every bite. Drain from the oil to make sure the oil is not too excessive.
- For the diping sauce, I used finely chopped ginger, garlic and onions. A little chili is used to give the sauce a red color and a spicy taste.
- Slice the leeks and it makes the taste even better as a complement to the fiber too.
- Saute the shallots, onions and ginger in a little oil, you can just use sesame oil to make the aroma more pronounced. Then add tomatoes and red chilies to the stir-fry, and also add salt, sugar and mushroom stock which gives a more umami taste.
- Add a little water that has been mixed with cornstarch to thicken the diping sauce.
- Serve Fried Green Peas as your high fiber snack!
