Tortang Talong with Giniling or Eggplant Omelet with Ground Pork

Have a nice day/evening to all Hivers around the world, especially to my Kababayans who love to eat tortang talong.

I'm sure this is one of Filipinos' favorites. So I am going to share our dish yesterday, which was "Tortang Talong with Giniling na Baboy" or "Eggplant Omelet with Ground Pork." It was so delicious, especially when you dipped it in ketchup. So come to my humble kitchen/dining table!


Tortang Talong with Giniling or Eggplant Omelet with Ground Pork




INGREDIENTS:





-Eggplant
-Ground Pork
-Egg
-Carrot
-Green Peas
-Onion
-Garlic
-Bell Pepper
-Crispy Fry
-Cornstarch
-Soy Sauce
-Salt
-Garlic Powder
-Ground Black Pepper
-Butter
-Canola Oil
-Water
-Ketchup


Preparation:




Wash the eggplant properly.
Wash the ground pork thoroughly then strain to drain.
Wash the carrot, peel it, wash it again, and cut it into tiny pieces. (It could also be done by grating it but I'd love to eat the bits of carrot.)

Peel and wash the onion and cut it into small pieces.
Wash and cut the bell pepper into small pieces, too.
Crush and cut the garlic into small pieces.
Beat the eggs and season them with ground black pepper, garlic powder, a pinch of salt, and crispy fry powder.
Beat all the ingredients until smooth.
Set all the ingredients aside.

COOKING TIME:






Cook the eggplant in boiling water until they are a little soft. (You can also cook the eggplant by steaming or grilling.) When it's already cooked, let it cool down. Then peel the skin off and arrange and flatten the eggplants in a plate. Rub them with a little salt to taste. Then set aside.






Meanwhile, heat 1 tbsp of unsalted butter in a pan. Sautee garlic, onion, and bell pepper. Add ground pork and continue sautéing until the pork turns light brown.





Make a hole or space at the center of the pan then add another 1 tbsp of butter and then put the carrot. Stir and continue cooking for a little while. Season it with just a little garlic powder, ground black pepper, and soy sauce. Mix to combine.




(I also made a little slurry of 1 tbsp cornstarch and 3 tbsp of water) Then add the slurry and the ketchup. Continue cooking until it evaporates. Add the green peas and continue stirring until it dries up. Transfer to a clean plate or bowl and set aside.





Heat some canola oil in a pan. While heating the oil, dip a piece of eggplant in the egg mixture. Make sure that the entire eggplant is being coated. Then gently slide the coated eggplant into the pan.




Top some ground pork mixture over the eggplant. Then add a little beaten egg over the ground pork and then scoop some oil from the pan and pour it over the ground pork to prevent the pork from falling apart. There’s no need to flip it to cook the front part. Continue this process until all the eggplants are cooked.

Place them on a plate with a paper towel to remove excess oil. Let it cool down and then transfer it to another plate without a paper towel.




Here's my delicious eggplant omelet with ground pork.

Serve it while still hot and it is tastier when you dip it with ketchup or vinegar, lime, and soy sauce mixture.

My wife loves this kind of food and I think this is her favorite because whenever we go to a food store and saw a tortang talong that they are selling, she will always say that she wants that one.
