Pork Curry with Apple

A pleasant day to all Hivers!
I hope all is well today...

Last Saturday night, we had a video call with my daughter's best friend who is now living in Texas. Actually, she's not just a friend because we treat each other as a real family.

As we were catching up and talking about different topics, time flew by quickly. It was time for her to have her breakfast. That was around 9AM in her place, I think.

But even when she's eating, we still continued our conversation and then I asked her what she was eating for breakfast. It was a packed food which is ready to eat. She just had to re-heat it in the microwave oven.

She said it's a pork dish, but she’s not very sure what it’s called. I asked her for the ingredients and she said it was pork, squash, and apple. Those were the three main ingredients and she said it was delicious.

I got curious again about this cooked apple because I haven't eaten it so far. We only eat apple as a dessert or in a salad. I've already seen cooked apple before but on the anime TV series I watched with my daughter. It was on MAJOR, a sports anime. When Shimizu (one of the characters) cooked pork curry, she added a whole apple in it.

And I also saw cooking competitions on TV that used apples as an ingredient. My curiosity and interest were ignited, so I decided to cook Pork Curry with Apple last Monday for our lunch.

And I was amazed at the result! It's really tasteful and the apple’s juice really blended so well with the curry sauce. Let me share how I did it.


Pork Curry with Apple




INGREDIENTS:





-Pork (I used Pork Ribs)
-Squash
-Apple
-Pechay
-Onion
-Garlic
-Ginger
-Spring Onion
-Bell Pepper
-Curry Powder
-Coconut Milk
-Tomato Ketchup
-Tabasco Sauce
-Maggi Magic Sarap Seasoning
-Salt
-Knorr Pork Cube
-Canola Oil
-Water


PREPARATION:





Wash the pork ribs thoroughly.
Wash and peel squash.
Wash and peel the apple. (But not the whole part)

Then slice or cut the squash into slightly bigger pieces.
Slice the apple with the shape and size you want. Then set aside.

Wash and peel ginger. Peel and wash onions. Crush and peel garlic. Wash bell pepper and spring onions. Cut ginger into strips. Cut spring onions into strips and then separate the white part from the green. Slice the bell pepper into cubes. Mince the garlic and slice onions and divide them into half.

Wash the pechay thoroughly and then cut them. Then set all the prepared ingredients aside.

COOKING TIME:





Heat a little amount of canola oil in a pan and then sauté ginger until aromatic.
Add the minced garlic until golden brown and then add the 1st half of onions and the white part of spring onions. Sautee them until all the aromas from different spices came out.





Add the pork ribs and continue stirring and searing for about 5 minutes. Then add 2 tbsp of soy sauce. Stir to mix and add 2 tbsp of tomato ketchup, again continue stirring to mix.





Then add 2 tbsp of curry powder and continue stirring to combine. Then add water at the same level as the pork. Cover the pan, bring it to a boil and continue cooking until the water is reduced and the meat becomes tender.




When the water is reduced already and the meat is already soft and tender, season it with Knorr pork cubes, a pinch of salt, a little magic sarap seasoning, and some drops of tabasco sauce.




Then add the squash and apple. Mix to combine well and then add the other half portion of the onions and the bell pepper.

Again, mix to combine very well, and then add the coconut milk. Cover again and continue cooking until the veggies and the meat is already cooked.




Then finally, add the green spring onions followed by the pechay. Continue cooking for just about 3 minutes or when the pechay leaves withered.





And this is it!





I was really satisfied with the result and happily served it to my family. I made them smile for taste approval once again. It is really fun to venture on some cooking styles and techniques while using different kinds of ingredients.

It is very good that you have a very good relationship with your daughter's friend. You have become quite curious about cooking apples. Also you saw a program on TV where apples were used. Good luck to you.
