My Home Cooked Version of Chicken Breast Afritada

Once again, I want to share with you one of my home cooked dishes which is my version of "Chicken Breast Afritada".



Chicken Afritada or Afritadang Manok is a tomato-based Filipino chicken dish. It has a vibrant color, flavor and texture that can make your mouth water even just by looking at it... so how much more when you eat it?

It is best served with rice in every meal and it is also commonly served here in the Philippines in any special occasions like parties and feast days. I hope you like the way I prepared and cooked it. Let’s start!

INGREDIENTS:

-Chicken
-Potato
-Carrot
-Green Peas
-Tomato Sauce
-Bell Pepper
-Onion
-Garlic
-Bay Leaf
-Knorr Chicken Cube
-Salt
-Brown Sugar
-Canola Oil
-Magic Sarap Seasoning
-Ground Black Pepper


PREPARATION:



Wash the chicken thoroughly and cut it according to your desired shape and size.

Wash and peel potatoes and carrot and cut them into chunks.

Peel and wash onion then cut it into smaller cubes.

Crush and peel garlic then slice it into smaller pieces.

Wash the bell pepper and cut it into squares or your desired shape.

Set all of them aside for cooking.


COOKING TIME:

Heat oil in a pan.

Stir fry the potatoes and carrot until they look crispy. Then set aside.

Slightly fry bell pepper then set aside.

Sautee onion and garlic until aromatic.

Add the chicken, sautee and stir with the onions and garlic. Then cover for a few minutes until the water from the chicken comes out.

Stir and sear again occasionally then cover for a while until the water is reduced or completely evaporated.

Then, put Knorr chicken cube and bay leaf, as well as some tomato sauce. Stir to blend.

Add 1 tbsp sugar. Stir again to blend in, then add 1 tablespoon ground black pepper and stir again.

Add water and then cover. Let it simmer for 15 minutes or until the chicken is almost cooked and the water becomes a bit sticky.

Season it with a pinch of salt and magic sarap seasoning. Then, add the pan-fried potatoes and carrot. Cover again and let it simmer until the veggies become tender but still crispy. Then add green peas and bell pepper and continue stirring to combine. Cover and let it simmer until it is already cooked.

Remove from the pan and transfer it to a serving dish.

I can now serve this delicious and savory chicken breast afritada with rice to my family.
