Malabar Spinach and Tomato Egg Omelet for Breakfast

It's a fine morning here today and since I still have a little spare time, I was able to take some photos of the food I prepared for breakfast. I decided to post it here no matter how simple it is.
We always have bread for breakfast, mostly wheat bread. There are times when there’s no available wheat bread in the nearest bakeshop or convenience store, so we'll have some moringa pandesal or puto maya., instead.

We always put some spread mostly peanut butter, sometimes any fruity spread, cheese and eggs prepared in various ways in our bread. This morning, my mind wanted to create something again with eggs. I wanted to make it more nutritious and I remember our malabar spinach in our little garden. I thought of trying to mix them with some beaten eggs.

So, I went outside to pick some malabar spinach. I also have some tomatoes, so I decided to cook malabar spinach and tomato egg omelet. We know that spinach has a lot of nutrients like calcium, iron, magnesium and vitamin A, so it can provide a variety of health benefits in our daily diet. Much more if we incorporate it with eggs and tomatoes that are both nutritious too in order to have a healthier breakfast. Here's how I did it…

Malabar Spinach and Tomato Egg Omelet for Breakfast




INGREDIENTS:



-Eggs
-Malabar Spinach
-Tomato
-Ground Black Pepper
-Salt
-Garlic Powder
-Canola Oil


PREPARATION:



Crack the eggs and put it in a clean bowl. Beat the eggs and add a pinch of salt and garlic powder. Then set aside.

Wash and clean malabar spinach and tomatoes. Slice the tomatoes and remove the wet part with the seeds. Pick the leaves of malabar spinach from the stem and then set aside.


COOKING TIME:






Heat a small amount of canola oil in a pan.

Sautee tomatoes for about 2 to 3 minutes then add the malabar spinach to skillet or pan and mix it with tomatoes, add a little of ground pepper then cover and cook until looking wilted for about 2 minutes.

Then remove them from the pan and transfer to a clean plate to cool down. When it has already cooled down, mix the sauteed malabar spinach and tomatoes into the beaten eggs.



Heat again with just a little amount of canola oil in a pan and then pour the egg mixture. Wait until it dries up a bit. Then flip the eggs with a big plate and then put it back to the pan or skillet to cook the other side.

And viola...!!!




Honestly, this is my first time cooking egg omelet with Malabar spinach because we mostly have cheese omelet and/or ham or tuna omelet at home. I am happy with the outcome though… and my family too. They love it.





We had a happy breakfast. We also paired it with some toasted wheat bread.




As for the drinks, I usually have green tea or chamomile tea. As for my daughter @tegoshei and my husband, they both love coffee. I like coffee too, but I sometimes have palpitations, so I changed to tea mixed with my homemade ginger and lemon drink.

I love it, suited my preferences, just no spinach available here in our local market .

Had also toasted bread with egg earlier!

You can use any green leafy vegetables instead of spinach.

Me and my family loves toasted bread though...😊
