Cooking Puto Maya in a Rice Cooker...



Puto maya is a Visayan term of glutinous rice cake. There are other kinds of rice cakes in the Philipines such as puto maya, biko, suman and others.

Puto Maya is famous here in Cebu and people here love having puto maya for breakfast paired with hot chocolate/sikwati and ripe mango.

We usually buy puto maya outside but I really wanted to learn on how to cook it and see if I get a nice result, so today I am trying my best to cook puto maya for us to enjoy for our breakfast.


So here's how I did it... Would you join me now...?

INGREDIENTS:



  • Glutinous Rice
  • Ground Coconut
  • Ginger
  • White Sugar
  • Salt
  • Vanilla Extract
  • Water

PROCEDURE


Wash/clean glutinous rice then drain and set aside.

Add some water to ground coconut. Press the ground coconut using your clean hand with a glove and extract the fresh coconut milk. And then set aside.

Peel and slice the ginger but I left a little portion of unsliced ginger. Grate some ginger then set aside.




I put 6 cups of coconut milk on a big bowl then added 1 cup of white sugar then stir to dissolve.

Then add 11/2 to 2 tbsp of salt or according to your taste. Mix or stir slowly to dissolve the salt.

Then add the extract from the grated ginger and put in the sliced ginger. Then add a spoonful of vanilla extract to add the aroma and flavor. But putting vanilla extract is just optional.


On the rice cooker pot put put 6 cups of washed glutinous rice and then pour in the liquid mixture.


COOKING TIME


Put the pot with the mixture of all ingredients into the rice cooker and start to cook.

When it starts to boil stir and mix from time to time until the coconut milk dissolves and the glutinous rice is partially cooked already. Then let it cool down a bit.


Prepare a clean banana leaves and put it on the steamer and set aside.
Transfer the partially cooked puto maya in a Tupperware. Then wash and clean cooker pot. The put water as level of a half portion of the cooker.


Put on the rice cooker and boil the water. As soon as it boils already put the steamer bedded with banana leaves then put in the partially cooked puto maya until it is fully cooked.


And yahoooo I successfully did it... My family praised me for the flavor and commented it is much much better than the puto maya we usually bought outside. We had a happy breakfast then and our tummy was so full.

And we shared some to our neighbors and they gave me the same comment that made me humbly happy and that boosted my passion in cooking... even just simple home cooked dishes.

But I am so much grateful to God for giving me this gift so I can always serve my family a good home cooked food on the table.

You know, puto maya is one of my favorite food before eating breakfast and it was a long time snack that we eat maybe at 6 - 7 in the morning because at that time, the puto maya is really hot and it's good when it's hot.
