Chicken and Veggies Stir Fry

As a stay-at-home mom/wife, I always have time to explore some good foods or dishes to prepare and cook for my family. Cooking good and delicious food is also one way of showing my love for them, and they always show satisfaction and happiness every time they taste and eat the foods I serve them, especially my daughter @tegoshei. It seems to be a stress reliever for her from work.
This was what I prepared for us yesterday. A simple but tasteful and nutritious "Chicken and Veggies Stir Fry".
Supposedly, I wanted a boneless chicken, but the supermarket nearby didn't have one. So I just used what's available in the wet market. That was assorted cuts or chopped wings, thigh, and the back part of the chicken. Thankfully, it still came out good and yummy.
I want to share how I cooked it with you all.
Chicken and Veggies Stir Fry
INGREDIENTS:
- Chicken
- Carrots
- Baguio Beans
- Cabbage
- Onions
- Garlic
- Spring Onion
- Soy Sauce
- Knorr Chicken Cube
- Maggi Magic Sarap
- Tomato Paste
- Ground Black Pepper
- Paprika
- Garlic Powder
- Salt
- Canola Oil
- Water
PREPARATION:
Wash the chopped chicken thoroughly.
Wash and peel carrots and then slice into strips.
Wash and remove the hard part on both sides of the Baguio beans and then cut them according to your desired size.
Peel and wash the onions. Cut them into two different shapes, one small piece and the other one into a half-round shape.
Crush and peel the garlic then cut into small pieces.
Wash the spring onions and then cut into small pieces. Wash the cabbage and then cut them into bite sizes.
Then set them all aside.
Mix the powder seasoning or spices all together like the ground black pepper, garlic powder, paprika, and Maggi Magic Sarap.
COOKING TIME:
Heat a small amount of canola oil in a pan.
Sautee onions and garlic until aromatic.
Add the chicken and stir fry until golden brown.
Then add some tomato paste and the powdered mixed seasoning.
Add a little water until it evaporates.
Season it with a Knorr chicken cube, a little soy sauce, and a pinch of salt to taste.
Then, add the carrots and Baguio beans. Stir to combine well and then add water again just enough to tenderize a bit of the veggies but enough to cook the chicken. Cover the pan, let it simmer, and continue cooking for a few minutes.
Then add the longer-sized onion and the white part of the spring onions.
Stir to combine and continue cooking.
When the chicken is already cooked, put the cabbage and the green part of spring onions. Stir and mix well. Cover for about two minutes or until the cabbage is a bit wilted. Then put off the heat.
And here it is!
It's really good and so flavorful. The veggies were cooked but are still crunchy, and I love it that way so does my family. Perhaps some of you like crunchy vegetables in some dishes.
